I am confused. Do they just "float" around randomly taking pictures and then you go search through boxes (I can't imagine how many there would be for a ship that size) for your pictures? Is there any kind of system? Do they take pictures in the kids clubs? I would love to have some candid shots of the kids.

Yes, they DO have a a system. The area is a large number of vertically slotted boards where the pictures are in display. The boards are arranged in chronological order by photo event. You will need to visit there often, as only a few day's worth of pictures are up for display at any time, the rest are rotated into storage until the end of the cruise.

Most of the photos are taken at "events" or photo ops, like character appearances, embarkation, the place where you can see the ship in the background on Castaway Cay, etc. In addition, they take photos by different backdrops in the atrium. They are organized on the boards by event.
They also walk around on the island taking random shots like the kids playing in the water. Those are all grouped together in one area to make them easier to find.
