Well Miss. Smarty Pants...that is indeed what I tried to do. It did not work out slick though because the wheel constantly moves even in a straight away and so I looked like Helen Keller was braille driving, oblivious to the metal on metal sounds emitting from underneath the car and also after her paralyzing ski jump injury because she could not feel the wham bam shaking of her torso and neck getting out of alignment as the car rocketed to and fro every three seconds!

Swear to Heaven that Dan asked if I was having an epileptic fit because all he saw from behind me (hahahahaha) was me violently jerking side to side and possibly cursing (hahahahahaha) I am dying trying to make this sound clean but there is no hope getting past the inuendo.

Tears streaming down my face as I speak, squeaking to try and breathe...my luck I will pass out and the dogs will not bother to call 911.

You have me stumped. The last non Dis trip was Charleston this summer but I have no idea what I possibly cooked?

All I remember is the plug in cooler being on hot/not cold and throwing out nacho cheese and boiled bologna!

In fact I need to go through all the postings to get all the recipes because the cookies and bars I have not made in a while and Treyner took my originals! So now the challenge to find them in the mass posts after that is on!!!

My famous PB&Bacon sandwiches

Recipe for Creamed eggs on toast - a house specialty!!

Creamed eggs on toast is made to taste but here is the general recipe.

Take a dozen eggs, hard boil them (put a drizzle of oil in with the eggs while boiling for easy peeling)

In a heavy saucepan, melt a stick of salted butter with 3-4 tablespoons of flour - making a rue starter.

Then add 3 cups of milk (I use whole milk for this - otherwise it gets too thin and let's face it - if this is a treat - once in a while is not going to kill ya. )

Put the eggs through a slicer both ways - add to white sauce and S&P to taste.

If the sauce is too thick - add more milk. Too thin - add another tablespoon of flour to a tich of milk - stir and then add to sauce till your desired consistency is achieved.

Take bread of your choice - put in toaster and when done - place a ladle full of eggs over toast - sprinkle with paprika and voila - amazing!!!

Chocolate-Dipped Key Lime Pie

This is very popular in Key West. There they sell slices of frozen key lime pie on a stick, dipped in chocolate, which you could certainly make at home. Chocolate is a perfect complement to the tart lime.

Use either slices of Frozen Key Lime Pie or freeze the filling by itself and cut into wedges or squares.

1. Stick a popsicle stick (available at craft stores) into the short side of a slice of frozen key lime pie.
2. Melt your favorite naturally-sweetened chocolate bar or chocolate chips in the top of a double boiler.
3. Dip slices of pie into the chocolate, and place on a sheet of parchment paper or silicone baking mat on a baking sheet.
4. Freeze until chocolate sets, then wrap each bar individually in parchment paper and store in the freezer.





and - a fantastic Key Lime recipe of mine if you want o make one and then make it into frozen chocolate goodness!!

Ingredients
For the crust:
1- 1/2 cups graham cracker crumbs (10 crackers)
1/4 cup sugar
6 tablespoons (3/4 stick) unsalted butter, melted

**** I think the crust comes out more even and thicker by using 1 1/2 of this crust mix recipe.



For the filling:
6 extra-large egg yolks, at room temperature
1/4 cup sugar
1 (14-ounce) can sweetened condensed milk
2 tablespoons grated lime zest
3/4 cup freshly squeezed lime juice (4 to 5 limes)

{note: I use closer to 1 or 1.5 tablespoons of zest, and I find that you need closer to 8 to 10 limes to get 3/4 cup of lime juice.}

For the decoration:
1 cup (1/2 pint) cold heavy cream
1/4 cup sugar
1/4 teaspoon pure vanilla extract
Thin lime wedges

(I use Mexican vanilla extract & cut key limes into thin slices instead of regular lime wedges. I have made it with Key Limes and regular limes BTW!)

Directions
Preheat the oven to 350 degrees F.

For the crust, combine the graham cracker crumbs, sugar, and butter in a bowl. Press into a 9-inch pie pan, making sure the sides and the bottom are an even thickness. Bake for 10 minutes. Allow to cool completely.

For the filling, beat the egg yolks and sugar on high speed in the bowl of an electric mixer fitted with a paddle attachment for 5 minutes, until thick {note: I use a regular hand-held mixer}. With the mixer on medium speed, add the condensed milk, lime zest, and lime juice. Pour into the baked pie shell and freeze.

For the decoration, beat the heavy cream on high speed in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and beat until firm. Spoon or pipe decoratively onto the pie and decorate with lime. Freeze for several hours or overnight.

***note: This pie needs at least 8 hours to really freeze, so I suggest making 24 hours in advance. Also, while you're at it, suggest making two pies at one time. Just double the recipe then serve one for the next day, and keep the other in your freezer for future snacking. It keeps in the freezer well for up to a month, and pretty good up to two months.)

I'm loving reading your trip report because my memories of that night are fuzzy. I remember eating at Casey's, doing Buzz Lightyear (in which I believe I was the supreme champion) and watching the fireworks with Shannon and her husband. That's it. I can't wait for you to continue so I can remember what else happened that night. Did you slip me a Mickey or something?

How the crap do those back up?? Did she take her foot off the gas and start rolling backwards? I see now why texting and driving is illegal... You stop the car cause you can't concentrate right in the middle of the road and get totally rear ended.

See...we were gettin' along great. And then you let slip that you are one of the people I hate the most. The "Let's See How Much We Can Scare People on HM" person. Let me explain.

I can ride any thrill ride or coaster you throw my way. I can't stand to have a nightlight or any light at night when I'm trying to sleep. I love films about creatures such as vampires and werewolves. But for some reason, the Haunted Mansion scares the living crap out of me. It took me until I was 14 years old to be able to ride it all the way through without crying. I was 17 the first time I ever kept my eyes open the entire time. Needless to say, I find HM scary enough without any extra help. But I digress.

I have this really hilarious video of my friend on the Speedway. I'm in agreement with you there...I don't think there's any real way to steer those without hitting the rails.

Can't wait for the next update!
