Definitely do a day a Seaworld. There are indoor air conditioned parts as well as outdoor sidewalks and lots of walking in the heat. No different than any other Orlando park. But Wild Artic and the penguin room are the most ice cold palces you'll find anywhere. To cool off, just hang out there for a while.
One thing I like is that from the Key West area to the Nautalis Theater, the north half of the park, the sidewalks are almost completely covered by trees. The writer above thinks SW is hotter, perhaps it is because with all the water and plants it is very humid, and the trees block the breeze a little bit. However, I much prefer the shade under the trees rather than the blazing sun.

Over at the Shamu Stadium end around to the Atlantis Stadium most of the sidewalks are wide open, and the reflection from the white concrete is enough to burn your legs. You want a Florida experience, walk across the bridge at noon.
Seriously, visitors know to put on sunscreen and wear a hat, but the direction of the buring rays is bounced from the ground up. Sunscreen the undersides of places you would normally would think would be in the shade. There is another thread about how some folks get not so much sunburned as a hives type skin irritation/prickly heat rash on their lower legs from the sun and heat reflected upwards off the white concrete onto the undersides of their untanned calves. Concrete makes a great reflector.
Don't let me scare you away from SW, the sun tip above applies to all the Orlando theme parks. Even Dis has not found a magic pixie
