We are going in April to WDW. We average about two trips a year but we do it as economically as we can, we are AP holders. We had the FREE dining plan in Aug. despite the AP's and that really spoiled us for sit down dinners. We have always toured early, and done sit down lunches in the past and then a quick bite at night. Eating a big lunch cut down on our pool time in the afternoon (we are from New York so that Fl. sun feels mighty good come April :sunny: :sunny: :sunny: ) and we always felt rushed.

My idea is this... What if we toured in the morning as usual and then around 1:00 head back to POR for some sandwiches (we have the fridge) chips, pickles and a relaxing afternoon at the pool... and then ate a great dinner out using our DDE card.

Now I need some exciting lunch options for my family so they do not feel deprived eating in the hotel room. No cooking ideas that would be yummy, and pleasing to two 40 year olds and our 17 year old ds. Be creative and we drive so we can bring/get pretty much anything! Thanks! :wave2:

How about some really nice salads?

I make one with spinach, dried cranberries, sugared almonds and mandarin oranges. To add more protein, you could top it with some of those pre-cooked chicken strips. I think Perdue makes them. Use a raspberry vinagrette and offer a roll with butter on the side. My family loves this salad and DD15, being a vegetarian, can still get her iron and protein without the chicken.

greek pita's
cut up a cucumber, a tomato, black olives, and some feta cheese. put all in a container with some greek or vinagrette dressing and let set in frig over night
serve in a pita and add side of chips and and store bought hummus

anit-pasta salads
lunch meats and cheeses (buy hams salami provolone etc.)
and serve on a bed of romain with italian dressing and a bread stick

mad4themouse your salad sounds yummy I am going to try it

I was going to say antipasta salad. It's my fav. You can also use the meat for sandwiches the next day.

I'd just get a bunch of stuff, different kinds of lunch meat and cheeses (ham, turkey, salami, provalone, american, swiss) and different breads, (regular sliced, rolls, etc) and also some salad stuff (lettuce, veggies, salad dressing) and then also get some chips, snack crackers, chex mix, etc, maybe some of the pre cooked chicken breast strips for salads and let everyone go to town fixing what thay want that day. Or you can fix a different thing each day, turkey and ham hoagies one day, antipasta salad the next, tuna on sliced bread the next, salad with grilled chicken and swiss the next, etc.

We always have "wraps" instead of sandwiches when we go camping. We take whole wheat tortillas (Sam's Club has some great low carb ones), and then lunch meat, cheese, lettuce, onion, grape tomatoes, alfalfa sprouts and ranch dressing. We just lay everything out and each person fixes their own. They are fast, and much yummier than a regular sandwich.

Dole has those salad kits that have the dressing and croutons/crunchy noodles depending on the salad in a pouch in the bag. You could buy some of those pre-cooked grilled chicken strips and have a nice quick easy salad.

I do a lot of wraps as well. My old standby is canned chicken breast, lettuce, tomato, cheese, salt and pepper, and ranch dressing. You could also buy potato or macaroni salad. Cheese and crackers is good.

Chicken pesto wrap- spread wrap or thin tortilla with soft, spreadable cream cheese, then top with pesto and sliced grilled chicken. Add lettuce if you like it- arugula or romaine works nicely for this.

Thanksgiving sandwich- turkey and cranberry sauce on white. Sounds weird, tastes delicious!

Santa Fe Sandwich (recipe stolen from my favorite deli) pepper turkey with pepper jack, mayo and thinly sliced avocado. Tastes best on a hearty white bread or great as a wrap, too.
