My husband, myself and our baby (7mo at time of trip) are going to Disney for a couple days in May alongside a work trip. We don't plan on doing much in the way of rides, mostly just pool time, exploration and a couple baby friendly rides. However, being giant star wars fans we were planning on just wandering around GE for a bit, maybe making a light sabre/droid.

However, with all the good reviews on RotR we were thinking of trying to get there early (LO is a super early riser anyways) and trying to get in a boarding group. Has anyone done rider swap for this, is it worth the effort if we're riding separately and alone?

Yes, we did rider swap. Just remember that both of you need a Boarding group. Definitely worth it even riding alone. The second person usually goes through the fastpass line so they do skip some of the que. it doesn’t impact understanding what is going on but it is faster and you don’t see everything. It’s great, definitely do it.
