My husband and I are big people. He in the abdomen and myself in the bust. We are worried about the Rocking Roller Coaster shoulder harness for me and any lap bars for him. I know that Everest has a trial car, any others?
 
If my memory serves me well, there is no lap bar on RRC...it's an over the head loop restraint that comes down to your waist and locks in place...you can then hold on to it with both hands if you want...or raise your hands and scream. I don't think either of you will have an issue with RRC even though the seats can be a bit tight.
 
I find both RnR and SM hard to get in and out of, so have started skipping them most trips. As for trial cars, FOP has one.
 

I'm a small guy, so can't answer directly, but Rockin' Roller Coaster has no lap bar. As mentioned above, it's a shoulder harness that lowers from above. I've seen some significantly large people get on it. As Oneanne mentioned above, it's not the easiest ride to step in and out of, but just take your time.
 
I wouldn't worry too much. Disney rides are generally accommodating to larger people. My friend, who is a big guy, once got on RnRC and the restraint literally clicked once. That was as far as it could come down on his big shoulders. Teh CM checked it, said it would be fine. My buddy was scared but he was indeed fine. I think Seven Dwarfs Mine Train was the most constraining for him and he de-boarded beforehand. He also could not do Flight of Passage. In some cases, it was certainly possible for him to ride, however it wasn't very comfortable for him, so he tended to shy away from repeat rides. Space Mountain was one where he did that and it had a lot to do with leg room.
 
FoP is the only one I might be concerned about. I am a big guy and had some trouble. I was able to ride after a few adjustments, but my first ride was pretty uncomfortable. I came back a few days later and was able to position myself better, so enjoyed that ride more. You may want to ask a CM to help you with the test seat out front, as I seemed to fit comfortably until they closed the restraints. My issue was honestly more leg length/thickness than my belly, FWIW :)
