Coral Reef Crab Cakes

Amount Measure Ingredient -- Preparation Method

Asian Vinaigrette
2 tablespoons coffee
2 tablespoons low*sodium soy sauce
1/4 cup olive oil
1 tablespoon hot sesame oil (spray)
1/2 tablespoon honey
Salt and pepper to taste
Roasted*-Corn Salsa
3/4 cup roasted corn kernels (1 to 2 ears)
1/4 cup diced tomato
1/4 cup diced onion
1/4 cup diced bell pepper
2 teaspoons rice vinegar
2 teaspoons olive oil
Juice from 1 lime
Salt, pepper and Tabasco sauce -- to taste
Crab Cakes
6 tablespoons heavy cream
8 ounces crab claw meat
1 small carrot -- minced
1 small celery stalk -- minced
1 tablespoon bread crumbs
1/2 teaspoon kosher salt
1/8 teaspoon black pepper
1 Pinch crushed red pepper flakes
1 Dash Tabasco
1/2 teaspoon olive oil
10 ounces mixed greens

Roast corn kernels: Wrap ears of corn with husks removed in aluminum foil and bake in a 450*degree oven for 15 minutes. Set aside to cool.
Place all vinaigrette ingredients in a jar and shake to combine. Set aside.
Cut cooled corn kernels from cob and mix kernels and all other salsa ingredients together in a medium bowl. Season to taste and set aside.
Preheat oven to 350 degrees. Bring cream to a simmer in a small skillet over medium heat, stirring frequently until reduced by half (4*5 minutes).
Pat the crabmeat dry and combine with cream, carrot, celery, bread crumbs, salt, peppers, and Tabasco in a large bowl. Form four patties.
Heat an oven*safe skillet over medium*high heat for 3*4 minutes. Carefully add olive oil. Fry for 1 minute, or until browned, on each side.
Place in oven until warmed through (5*8 minutes). Serve over mixed greens tossed in Asian vinaigrette. Top with roasted*corn salsa.

Chocolate Wave Cake

Amount Measure Ingredient -- Preparation Method

3/4 cup butter
1 cup semisweet chocolate chips
1 cup sugar
2 1/2 teaspoons cornstarch
4 eggs
4 egg yolks
1 1/2 teaspoons Grand Marnier
white-chocolate truffle
6 ounces white chocolate
3 tablespoons heavy cream
3 tablespoons softened butter
2 tablespoons Grand Marnier

Melt butter in a double boiler over medium-low heat.
Add chocolate chips, heating until mixture is melted.
Combine sugar and cornstarch in a large mixing bowl.
Add chocolate mixture to sugar mixture and beat well.
In a separate bowl, combine four eggs, four yolks, and Grand Marnier. Add this to the chocolate mixture and beat until well mixed. Cover and chill overnight.
Melt the white chocolate and heavy cream in a double boiler over low heat. Add butter and Grand Marnier and stir until smooth. Chill overnight.
Butter and flour six 5-ounce ramekins. Fill 1/3 of each with the chilled chocolate mixture.
Add a rounded tablespoon of the truffle mixture. Fill to the top with the chocolate mixture.
Bake at 450 degrees for 15 minutes. Let the cakes sit for 15?20 minutes before inverting. Run a knife around the edges to loosen. Serve with chocolate sauce, raspberries, and/or ice cream if desired.
 

We ate at Coral Reef 2 Disney Trips ago. It was our free dining trip - otherwise we wouldn't have been able to afford it! (5 people in my family!)

We were celebrating DH's birthday, so I had the diver set up. We had a great table right in front of the tank. The personalized menus were brought out and clued DH in on the surprise. The diver came over and held up the sign. DH loved it!!!

The food was wonderful. My DD and I made some substitutions on our plates and there were no problems doing so. Dh still - to this day - claims that the meal he had a Coral Reef was his best Disney meal ever!! (Maybe even his best restaurant meal ever!!) The waiter was beyond excellent - my water glass was never less than half full.

We'd love to go back sometime. Maybe when it's just Dh and I.....

One of my sisters is like that. That girl used to pose at the drop of a hat. I was her maid of honor, the photographer couldn't believe how quickly we got the pictures done....he would say to her, just move your head a bit, she'd do it, and poof he was done. Now her girls (Sammie & Dana) are just like her. they never turn down a chance for a picture. My nephew Matt is like that too.

It sounds so good. I don't think they do the personalized menus anymore.
 
We've never eaten at Coral Reef.
We try to go to every restaurant (well, maybe not Tony's :rotfl: ), so it will be on the list for an upcoming trip.
 
Love Coral Reef (again). The last 3 trips were delicious. We boycotted for the 4 trips prior because the quality of the food went down the tubes & we were all very disappointed.

The fish was very fresh, service great & desserts delicious. They also have a nice wine list & fun specialty drinks.
I love walking into Coral Reef it's another world:love:

Grapefruit Cake

Amount Measure Ingredient -- Preparation Method

Cake
1 1/4 cups flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup vegetable oil
1/4 cup water
3 large eggs -- separated
3 tablespoons grapefruit juice
1/2 teaspoon fresh grated lemon peel
1/4 teaspoon cream of tartar
Frosting
16 ounces cream cheese -- softened
2 1/2 teaspoons lemon juice
1 teaspoon freshly grated lemon peel
4 drops yellow food coloring
1 cup confectioners' sugar
2 cups grapefruit segments (from Ruby Reds)
candy confetti -- garnish

Oven to 350 degrees. Lightly grease 2--8" round cake pans.
Cake: Mix flour, sugar, baking powder and salt in a large bowl. Make a well in center. Put oil, water, egg yolks, grapefruit juice and lemon peel in well.
Stir liquid to mix, then stir with flour mixture until blended and smooth.
Beat egg whites in a medium bowl with mixer on high speed until frothy. Add cream of tartar and beat just until stiff peaks form when beaters are lifted.
Using a rubber spatula, stir 1/3 of the beaten whites into batter, then gently fold in remaining whites just until blended.
Divide between pans, smoothing surface.
Bake 20 minutes or until cakes spring back when lightly touched in center. Cool cakes in pans on wire racks for 5 minutes. Run a thin knife around edges of cakes. Invert on racks to cool completely.
Frosting: Beat cream cheese in a large bowl with mixer on medium speed until smooth and fluffy. Add lemon juice, lemon peel and food coloring.
With mixer on low speed, gradually add confectioners' sugar, beating well until blended. (Frosting will be soft and airy.)
Finely chop enough grapefruit segments to measure 2 tablespoons. Gently stir into frosting.
To assemble: Place one cake layer on a serving plate. Spread top with 1/2 cup frosting. Cut enough grapefruit segments into thinner wedges to cover frosting. Top with second cake layer. Frost top and sides.
To serve: Garnish with remaining grapefruit segments and candy confetti.

Cobb Salad

Dressing
2 tablespoons water
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt -- or to taste
1/2 teaspoon minced garlic
1/4 teaspoon sugar
1/8 teaspoon freshly ground pepper -- or to taste
1/8 teaspoon dry English mustard
1/2 cup vegetable oil
2 tablespoons olive oil

20 ounces European salad mix -- finely chopped
1 bunch watercress -- finely chopped
1 pound turkey breast, cooked -- finely chopped
6 slices bacon, cooked, drained -- finely chopped
3 hard cooked eggs -- finely chopped
2 large tomatoes -- seeded and chopped
1 avocado -- seeded and chopped
1/2 cup bleu cheese -- crumbled
1/4 cup chives -- chopped

In a small bowl, whisk together the water, red wine vinegar, lemon juice, Worcestershire sauce, salt, garlic, sugar, freshly ground pepper and dry mustard until well blended.
Whisking constantly, add the vegetable oil and olive oil in a slow steady stream until the dressing is emulsified.
Store covered and chilled until ready to serve. Whisk the dressing to blend just before serving.
Place salad mix and watercress in a wide, shallow serving bowl. Top with rows of remaining ingredients except chives. Arrange chives in a diagonal band across.

To serve: Toss salad with dressing at the table. serve on chilled plates.
 
We have been to the Brown Derby a few times. It is one of DH's favorite. For me, it is only okay. I am kind of a picky eater.
We go for lunch and have the Cobb Salad.
We eat here about every other trip.
This is the restaurant he ate at for the Lunch with an Imagineer and loved that.
 
Its on my list and in Nov. we wont be on the QSDDP, so I may finally get to eat there. I want to try the cob salad. ::yes::
 
It's yummy.....VERY finely chopped. I can't chop it that fine at home.....not enough patience :rotfl:
I think DH wants to do the Lunch with an Imagineer again.....we'll see if it is in the Dec. 2011 trip or the one after that.
 
I really enjoy the Brown Derby, we have eaten there a few times. I really can't remember what I ate, but can remember it served my favourite wine (Cunundrum) which is often difficult to find!
 
Nope...finer than that.
Maybe a food processor, but I don't want it to turn to mush :eek: I chop it as fine as I can and it is fine with us.
that is one Disney recipe that I make over and over again.
