Are you able to make a dinner reservation at the 180 day mark for your day of departure?
 
Only if you are staying at a WDW resort and your trip is for 10 days or less. One of the benefits for on-site guests is the ability to make dining reservations on your 180th day from check-in + the next 10 days of your trip.

Perfect! As long as your resort reservation is linked in My Disney Experience, you should have no issue making ADRs for the duration of your stay on your 180th day.
 

If you are a resort guest, you can book at 180 for 10 days. If you are on the DDP you can use your credits until midnight the day of departure.
 
As others have said, as long as you are a resort guest and its under 10 days.
We just booked our ADRs at 180 days today and included an ADR for the day we depart without any problem.
