Is the current hold situation that I can hold a cruise for the 3 days then pay the deposit within that time? Reason I ask is that there are 2 potentials but not same length so need to do some add on pricing to figure out if one is doable still but don’t want to lose opening price of either. Can this be done or is this exactly why DCL prices go up so much!?!
 
You have until 11:59PM on the 3rd day to pay your deposit. I would not cut it that close in case there are any processing/access issues. Yes, holds affect supply which then pushes up prices. It would be nice if they could/would adjust back down a bit as holds are released but the Mouse loves that cheddar.

what is this? i thought you had to pay the deposit to book a stateroom...?

Does the cost of the cruise remain the same, if the prices actually increase in those 3 days?

In my experience with holds, it remains the same. You have an actual reservation, you are just getting a few extra days if you need to plan/budget/whatever to get the deposit in.
 
The hold is also useful if you want to pay the deposit with gift cards. You won’t be able to use gift cards online for the deposit.

So you make the hold to get the cabin you want, and hold the price, and call DCL at your leisure (within 3 days) to give them the gift card numbers.
