Can you rent points from more than one person to complete point requirements for a ressie?

It depends. You don't rent points but reservations. As long as you rent the same unit type, you could rent full nights from different people and link them. You just need to make sure you have things that can be linked, for example, a lockoff 2 BR could not be linked to a dedicated one.

Unless the member is willing to transfer points to another member, you'd have to get full nights from a single member. You can't just add points from one member to another to get a single night.
