Red Velvet Cake

I love Red Velvet Cake!! It's DFiance's favorite so I have to learn how to make a good one here soon! :thumbsup2

I have had some gross, dry red velvet cake but I've also had amazing red velvet cake.

I would love to see your recipes!

I used to like Red Velvet cake until my DD5 threw up after eating it. Now I have a big stain in the carpet next to her bed to remind me that I don't like Red Velvet cake anymore.

I had a co worker who made the BEST RV cake in the world, man, I could eat the entire thing.

RED POUND CAKE .... :scared1: No WAY!! I hate hate HATE pound cake and RV cake AIN'T pound cake.. by a mile!!!

As an interesting note, Johnnie Gabriel, who owns the bakery, is Paula Deen's cousin.

This is the recipe I use and it is available on the Food Network website. Go on the site and look up the "Atlanta Eats" episode of Paula's Party. You will find the recipe there. It is a fabulous and VERY moist cake that is just delicious. The cream cheese frosting is easy to make and also very very good.

Have you ever tried this? It seems like it's a very trendy cake/cupcake right now but I always find them to be very dry, probably because the recipe uses cocoa powder.

I've made red velvet cupcake for DD's class for her birthday and then took some to work, everyone loved them. I've also had a red velvet cheesecake layer cake! :cloud9: Neither dry. OMG, time to treat myself. popcorn::

Doesn't POP just use the red cake part as a bottom crust-like layer for the tye dye cheesecake? :confused3
 
It shouldn't have anything to do with the cocoa powder unless the person making it is just using wayyy too much. My recipe only calls for a couple of teaspoons of cocoa powder. My recipe is the same as my granma's and it is really moist. It's my favorite kind of cake but only if made properly with cream cheese icing. Buttercream or white just won't do. I hate when people put nuts on the frosting though. It really does seem like its trendy right now which is funny because I know where I'm from in the south its as old as dirt and very southern, even though some claim it was invented at the Waldorf Astoria, my granny swears it's a southern invention. LOL!

I've never heard of it being invented at the Waldorf Astoria. I refuse to believe it--only a southerner could have invented this cake!
 
On food network last night, they had Bobby Flay on where he was challenging a Red Velvet Cake EXPERT! Google Food Network and Bobby Flay and see if it comes up. This guy was in NY and used vinegar in his cake.;) "The Cake Man" I think his name was.;)


I wonder if he used the vinegar to replace the buttermilk? You can mix it with milk to make "buttermilk," which I understand isn't always readily available in some parts of the country.

maybe the pound cake version was "her version" which is fine. Altho it might not be the traditional version...

I know my mom's red velvet cake never had cream cheese frosting.. but rather a cooked fluffy frosting that I loved. She made a 6 layer Red Velvet Cake with that lovely frosting for my 14th birthday... I still remember it. I wish she were here to make it for my 50th next year.
 
My mother used to bake the red velvet cakes occasionally when we were kids. She hasn't made one in years. I LOVE them. Here is her recipe, which BTW says "Waldorf Astoria Cake" on the recipe card.

2 c flour
2 TBSP cocoa
1 1/2 c sugar
1 tsp salt
1/2 c Crisco
1 c buttermilk
1 tsp vanilla
1 pz red food coloring + 1 oz water
2 eggs
1 TBSP vinegar + 1 tsp soda

Sift together first 4 dry ingredients in large bowl. Add Crisco, food coloring " water, vanilla, and 2/3 of the buttermilk. Beat thoroughly BY HAND. Add eggs and remaining buttermilk. Beat approx. 1 min. with mixer. Last, mix vinegar and soda in a cup and "gently" add to batter, mixing by hand.

Bake at 350* for 30 minutes.

Frosting:
Cook 1 c milk and 1/4 c flour until thick, and cool. Add a pinch of salt. In a large bowl whip 1 c sugar, 1 tsp vanilla and 1 c Crisco on high until fluffy. combine with flour mixture and beat again until very fluffy. Garnish w/ coconut.

Oooh, this sounds like such a good idea!! I looked on the website and loved the sound of the mango cheesecake too...they really ship nationwide?! How do you order?

That is what my mom always used for icing also. :cloud9: No other icing tastes the same. She has tried to make a substitute that is very similar that doesn't have to be cooked and has less chance of "lumps", but it just isn't the same.

The recipe for the cake is either the same or very similar, but the icing is different. I think it only uses butter or margarine and not crisco.

Oh and we always called it Red chocolate cake growing up. Never heard it called Red Velvet until I moved south. :laughing:
 
I agree with these two!! My favorite red velvet cake has a cooked frosting. I don't care for the cream cheese frosting on it, I think it overtakes the flavor of the cake. Put the cream cheese on the carrot cake!!

Here is the recipe that I am more familiar with:

Red Velvet Cake

1/2 cup shortening
2 eggs
2 Tbsp. cocoa
1 cup buttermilk
1 tsp. vanilla
1 tbsp. vinegar
1 1/2 cup sugar
2 oz. red food coloring
1 tsp. salt
1 tsp. baking soda
2 1/4 cup plain flour (not self-rising)

Cream shortening, sugar and eggs. Add flour. Mke a paste of the cocoa and food coloring. Then add salt and buttermilk, vinegar, vanilla and beat well. Stir in soda last. Bake in a 350 degree oven for 35 to 40 minutes


Cooked Frosting

1 cup milk
5 tbsp. flour

Cook in a saucepan until it is a thick paste. Let cool.

Beat together:

1/2 cup crisco
1 cup confectioner's sugar
1/2 cup butter

Do not melt buter. Beat mixture until it is fluffy. Add the cool paste and beat until fluffy. Add 1 tsp. vanilla. Beat 20 minutes more. Spread on a cooled cake.

I have never tried red velvet cake but it is DH's favorite. I am going to try this recipe for the holidays. Maybe I'll do a trial run this week!

You should do a trial run if you have the time. As you can see a red velvet cake can turn out awesome or horribly nasty. Good luck with it!

What kind of icing will you do? My husband loves it with the Cream Cheese Frosting. Actually in the area where I live it is always served with this frosting.

Here's a recipe - I had it at a party, it was awesome - it's now what I make when I make red velvet cake!

1 box yellow cake mix
2 t. cocoa
1 - 5oz box instant vanilla pudding
4 extra large eggs
3/4 c. milk
1/2 c. oil
1 t. vanilla
3 oz red food coloring

Mix all together - bake 30-35 min. at 350 degrees

Frosting -

10 heaping T. flour
2 c milk

cook to thick paste and cool, beat with mixer after cooked to make it smooth.

then, cream together -
2 c. sugar
2 c. room temp. margarine
3 t. vanilla

- mix the paste and the creamed mixture together, a little at a time.

Keep cake in refrigerator, remove 5-10 mins before serving.
