We are arriving this Friday and in reviewing my plans - we are leaning on QS a lot. But I think after a few days of traditional burgers and chicken strips we will very much want something different. Obviously I'm not in a good place to make a reservation so please recommend good QS options and TS that might not be difficult to get a ADR. I have Flame Tree BBQ on the list.

For TS I would suggest the following places that might be easier to get:

Ale & Compass
Grand Floridian Cafe
Trattoria Al Forno

For QS, the most unique, and in my opinion the best on property, is Satu’li Canteen in Pandora/AK. At Hollywood, Docking Bay 7, Woody’s Lunchbox, and Ronto Roasters are great options. In Epcot, we’ve always liked Le Cantina de San Angel, Regal Eagle. In MK, we like Pecos Bill, always go to Cosmic Ray’s for Sonny Eclipse, and enjoyed this past trip the spring roll cart in Adventureland, though it’s pretty expensive now.

Agree with the suggestions you had already but wanted to encourage you to continue to check for last minute TS openings even while you are there... people cancel all the time, especially at the 24 hour mark, and you might be surprised at what you find!

Just check periodically through the day and you will typically find just about anything you want, outside of maybe Sci-Fi, CRT and a few other standard tough gets. We went to US last October and decided after a few days of bad US food we would eat at WDW at night for the rest of our trip. We landed Sanaa, Boathouse, Narcoossee's and others day of and day before. People are always canceling reservations.

One reason I used to love Tangerine Cafe was that it was a QS with different options. I hope Disney finds a way to bring it back.

We did a weekend trip and I was able to get last minute bookings (both day of, very last minute) at Paradisio 37 and Boathouse. Paradisio was fine, we enjoyed the meal and it was nice to sit down. We found the lines for QS to be outrageous so this worked great for us. Boathouse has tables on the dock that are first come, first serve. That saved our butts late night Saturday when we had nowhere to go and were starving. The food trucks can also be a good option, usually not as long of a wait. If you’re willing to go to resorts I’m sure you’ll have lots of other options too that’s just what we found at DS.

Spice Road Table in Epcot is TS but is walk-in only, no ADRs. I haven’t eaten there but I’ve heard very good things about it.
