I have a bunch of chicken breast tenderloin strips I bought on sale that I want to stir fry with some seasonal veggies. How would you do this, all the recipes I find use soy sauce and I didn't want to use those types of seasonings. I wanted it to be fresh and light.
 
You can marinate it in some Mojo for a while and then stir fry with red peppers and any other veggie you want.

would you just stir fry in some olive oil? would I need any other sauce or just the olive oil and the marinated meat?
 

You can keep it simple with Olive Oil and salt and pepper, or even just put a couple tablespoons of Italian salad dressing, I love to cook with Italian dressing, it is as light as the dressing I use (I use low calorie Good Seasons Italian), it flavors the chicken and the vegetables!! You could even throw in a handful of bowtie pasta!

I love the fajita style idea! Get some fresh tortillas and shred some cheese, add salsa---yum!

What about some tomato sauce and some pasta? Go Italian style! If you have squash or zucchini that would be good with it!

OK, now I'm hungry, LOL!!
 
I would just fry them in some olive oil with seasoning and then toss them with the veggies for an additional quick fry until the veggies are done.
 
You can definitely just use a small amount of olive oil if you'd like. I do this quite a lot, and rarely marinate the meat.
