Recipe ideas?

We are having a big party next weekend and I'm trying to save money anyway I can. I have tons of zuchinni and yellow squash in my garden -does anyone have any simple, yummy recipes for a crowd? We are serving baked ziti, meatballs, salad, Italian bread,... We will not be grilling. Thanks for any suggestions!
 
I realize you're already doing a lot of Italian, but one of our faves is to slice the zucchini and squash lengthwise (1/2 -1 in slices), add tomato sauce, bake for 25-30 minutes, add cheese, and finish until the cheese is melted. You can also bread the zuke & squash first if you prefer. It's basically like eggplant parm, but with squash and zucchini. Very yummy!
 
Have you ever made zucchini pie? Cut up it would make a great appetizer or another side dish!
 

My Mom used to make a chocolate zucchini cake that was really good. How about a dessert?
 
I just used an allrecipes.com recipe for dinner this evening--Zucchini Souffle. Very good and easy. I also made a chocolate zucchini cake. Mmmm...
 
Instead of banana bread, plug in the zuchini :thumbsup2 Kids love it and it taste the same.
 
I would slice them, drizzle with olive oil, add salt pepper and garlic powder and roast them.
 
I know you said you wouldn't be grilling, but would you grill before people got there? We love grilled zucchini. just a little salt and oil, grill it till it's soft and "marked" and then put it on a platter. I sprinkle GOOD balsamic vinegar over it, and that's it!

Can eat it warm or cold.
 
Fresh pasta salad. Cut up the zuchinni and yellow squash and serve with tri-color pasta, some Italian dressing and anything else.

I think it'd be easiest to steam or roast them and just serve as a vegie side, but here's another idea if the meatballs you're serving going to be homemade. If so, I'd be tempted to do stuffed zucchini instead. Just steam the whole zucchinis a bit to soften it, and hollow them out like boats. Chop up the insides and add it to a basic meat/breadcrumb/spice mix, (I'd cook and drain the meat first though), stuff and bake, cover it with cheese toward the end of baking.
 
I like to saute them in olive oil and garlic. You will need a lot of squash, it cooks down a lot! Crush the garlic, add to olive oil, and turn the heat to the lowest setting for as long as you can...or use garlic olive oil. Cut the squash in thin wedges, raise the heat on the skillet, and saute until browned.
 
Cut them into "fry" shapes, dip in egg and then bread them with italian bread crumbs and parm cheese and bake... Really good!!!
