I hadn't done this for years, but did this last week one day when I needed a side for grilled meat & it was too hot in the kitchen.
Thinly slice potatoes (skins on or off as desired). Put in a large bowl to allow easy mixing. Add oil & spices. I used: garlic powder, cardamom, gr celery seed, curry, paprika, sal & pepper. Stir with a spoon to coat evenly. Place in foil packets & grill 8- 10 min on the 1st side, flip & grill 5 min on the 2nd. We then moved the packets to the rack/shelf & grilled the meat. (If you go light on the oil, it helps to spray the foil with a little more before adding the potatoes - to prevent sticking.) DH & DS like their with strips of onion & pepper in the packet also.
I've been doing Boma's Potatoes with Afritude recipe this way, too - just slice into circles instead of wedges.
