I found the best shorts a couple of trips ago!
http://www.amazon.com/Columbia-Wome...0&sr=8-2&keywords=columbia+sandy+river+shorts
They're lightweight, comfortable, cool, quick-drying, and work great at WDW! They hit your leg a couple of inches above the knee (a really good length, not too short) and even have a couple of cargo pockets. And, even better, you can easily wash them out in the bathroom sink at night and they're dry by morning! They would also be great on "wet" rides like Splash or Kali. I can't say enough good things about them!
For tops that would be quick-drying, Target carries Champion brand t-shirts in their athletic-wear section. They're moisture-wicking shirts means for runners, and I think they would be good for WDW, too. Champion also makes moisture-wicking socks (the "footie" kind) if you wear sneakers. Much cooler than regular socks.
