When we purchase we plan on buying 160 points which will allow us to go every other year. But will leave us with 65 unused points. What do we do with those points? I don't want to waste them..
Also, we would eventually like to visit Aulani but are short about 120 points. At anytime can we buy additional points? Thanks!

Look into the Basic ins and outs of DVC, you will find that you can banking and borrowing points. You can add on points anytime at resorts that DVC is currently selling new, and might have to wait to buy at other resorts that are already sold out. You can also add on via resale.

If going every other year, you can buy half of the needed points for your stay and bank your points to double the number of points available. You could also buy a few extra points and rent out a reservation to use them up. For Aulani, you can rent a reservation from another owner.

I'd recommend buying for the number you'll be using vs some amount that you won't. As Bill mentioned, if you're going every other year then buy 1/2 of the points you'll need for your average stay and either bank or borrow to have the amount needed.

If some years you do have extra you can rent them out although brokers do usually have a minimum amount they will rent out so you'd need to do the rental directly. You can use banking and borrowing - is that not enough to get you Aulani? Since you'll average 65 extra points but state your short for Aulani just mentioning that.
