Question about desserts made with alcohol

Chocolate Wave with Brandied Cherries, Bailey's and Jack Daniel Mousse, I know there are more. I wonder if it's just a little flavoring of the liquor, or enough to prevent you from letting the kids taste it or even eat it? Anyone know? I guess you could "hold" the brandied cherries, I know my kids would love that chocolate cake!
 
When you cook with liquor, the alcohol cooks out, and only the flavor remains. It will be safe to serve your children.
 
Some sauces available with bread puddings contain alcohol - they're labeled as such--at least they were at Boma. Zebra domes also...and I've seen the recipe for them - it's like a1/4 ounce of Kahlua per serving...which is more than just a "flavor". In the zebra domes, the alcohol is not cooked at all - stirred into the non-cooked part. Anyway, contrary to old wive's tales, the alcohol does not get cooked out of most recipes anyway since it takes a long, long time at a very high heat to cook out alcohol...and often the alcohol is stirred into a sauce or topping after cooking. The Bailey's desserts I've tasted have a very strong flavor of Bailey's so don't think that's just a flavoring, either. Up to you whether you want your kids to try them.

Here's another article that actually has a USDA chart showing the percentage of alcohol retained - note that it takes a very, very long cooking time to cook out most of the alcohol--the top four methods would be the kind most often employed in dessert preparations (you're not going to bake a dessert for 2.5 hours, lol.)

Thanks, I kind of figured that the alcohol wouldn't be cooked out since none of the ones I listed are even cooked. I didn't know about Kahlua in the Zebra Domes, that is sad for the kids but :goodvibes happy for me!

I wonder how many Zebra Domes a kid could eat before they became intoxicated? Not for my kids, of course, they may get a tiny nibble of one of mine...but I can see some parents not realizing how much Kahlua is in one (unless the actual amount is labeled on the buffet) and letting kiddos eat all they want!

Zebra domes are awfully sweet...my guess is the typical kids could not eat enough to get tipsy, just because the ultra sweetness would be offputting. And a lot of kids would not like the taste, either (a lot of adults don't like the taste of Kahlua, either.) I read somewhere that they are now offering with & without alcohol zebra domes...don't know if that's true or not. I do know they had two bowls of the sauce for the bread pudding at Boma, one labeled as containing alcohol, and that bowl was sitting farther back, I suppose to make it more difficult for children to accidentally get the wrong one.
 
I have a problem with giving a kid a dessert that is prepared using alcohol.
 
I do too. But it depends on the amount. I use real Vanilla when I cook/prepare and since it isn't a huge amount I never think twice about giving it to my kids.

Even with the Zebra Domes have only 1/4 oz (1/2 Cup Kahlua for 16 domes). Kahlua is 17% alcohol by volume, about 3 times as much as beer. So, 1 Zebra dome has less alcohol than one oz of beer. Now, I guess if you let your kids go wild and wolf down a dozen domes they would get tipsy. But one or two would be OK.

1/4 oz is 1&1/2 teaspoons I think there's a lot more alcohol in a dose of cough syrup.

They'd get ill before they'd get drunk from a dozen of those things.

Disneybass - you realize that almost all desserts that are made with extracts (such as vanilla, but peppermint, almond, etc.) are made with alcohol? Unless you are shopping Halal, or baking from scratch and not using extracts, they get alcohol - its really a matter of "how much."
 
I think the alcohol would be cooked out of the brandied cherries. I imagine that's prepared mostly the same way as banana foster.

2) But, untrue.
3) Alcohol does not cook out of food, even if flamed !

A previous poster made a good point...there's more alcohol in some cough syrups then the 1/4 oz. They'll be fine with one zebra dome...but a whole case of them? i wouldn't recommend it ;)
 
The flavor of the liquore (sp?) in the Chocolate Wave berries is pretty pronounced. I don't consume alcohol at all, and when I tasted it I was pretty surprised. My kids would not have eaten it because of the taste. DH enjoyed the dessert :)

I agree. I was surprised with how strong the alcohol flavoring was in the chocolate wave. But I'm also not a big drinker, so maybe I'm more susceptible.

I don't think it would be a be problem if your kids have a little taste. Though they might not even like it because of the strong flavor.
