Pumpkin Pie Question

I've never tasted a store bought pumpkin pie that I liked. I admit I've never tried Costco. I always make my own crust, but I think the refrigerated pilsburry ones are good. I would not pre bake crust no matter which one you use. I also use either fresh sugar pumpkin or canned Libby's pumpkin not the pumpkin pie filling. It's just not as good. There aren't a lot of spices to buy for it. I guess I am a pumpkin pie snob. Lol.
 
If you decide to go the 'bake it yourself' route, you can get a mix of spices labeled 'pumpkin pie spice' so you don't have to buy 3 or 4 different spices. Just 1 jar has it all.
 
We don't like the Costco pies. I make mine from pure pumpkin from a can and add the rest of the ingredients myself. I use evaporated milk, the condensed milk would make it really sweet. Too sweet for us. Also, do not bake the pie crust before. To get the pumpkin filling into the crust without spilling it is easy. Put the filling in a measuring cup that has a pour spout. Then put the crust in the oven and fill it right there. I have never had a problem doing this. Good luck.

That's just what I was going to suggest. I prefer using the canned "pure pumpkin" and adding the spices myself. The pumpkin pie spice has cinnamon, ginger, nutmeg, and cloves. It's kind of pricey for what you get, maybe $4.29 for a small container, but still much cheaper than buying individual spices you're unlikely to use again.

Not sure if you need to defrost and/or pre-bake a frozen pie shell. I use the refrigerated kind that you just unroll.
 

Another vote for Costco pumpkin pie if you can get it. Tastes wonderful and feeds a crowd that's how big it is.

But if you have to make one, I would get the pumpkin can that has the spices. I think the frozen pie crusts instruct you to pre-bake it before you fill it .

The company brought in Costco pumpkin pies this year for Thanksgiving (since it isn't a day off for us). The filling is fine, but the crust was awful. To OP, I'd just buy the canned pumpkin with the spice mixed in. DW and DD always use the unseasoned pumpkin and put their own spices in, but the pre-spiced is just fine too. Always going to be better than a store made pie.
 
Please buy Libby's pure pumpkin. The spice added ones are blech! If you have a co-op or natural foods store you can buy loose spices. They may cost $24.95 a pound but buying 2 teaspoons worth will be like .25 cents and WORTH it!!! Follow the directions on the Libby's can and you'll be fine. A good crust can make or break a pie and I have a great recipe, but if you're not comfortable doing scratch, I guess use a refrigerated one.

If you want the crust recipe, just let me know
 
Or go to the grocery store and buy a Sara Lee or a Mrs. Smith's pumpkin pie out of the freezer section.

NOT a fan of the Costco/Sams Club pumpkin pie. I can taste the preservative.

Buy a can of Libby's canned pumpkin and follow the directions on the can. It's really easy! Look at Dollar Tree, Ocean State Job Lot, Christmas Tree Shop, etc. for spices; there are a couple of brands that are only $1 for a big container. It's way more spice than you'll need, but it's more affordable.

Regarding the crust, I'd use one of the Pillsbury refrigerated crusts. They are easy to get into the pan and taste pretty good. Honestly, if you are careful you can stretch them to fit and won't need to roll them out- although if you need to roll one, make sure to use some flour to keep the crust and rolling pin from sticking- and a wine bottle makes a dandy rolling pin! You can do this!

***NOTE: Libby's pumpkin comes in 2 can sizes- enough for one pie or two pies. I don't want you to panic if you buy the 2-pie size and so have a lot of leftover filling! Also, make sure you are buying the pureed pumpkin and NOT the pumpkin pie filling.
 
I also like the Costco pie.

This year I made a pumpkin pie. I used real pumpkin -it was really easy slightly more difficult than canned. I also used a pilsbury pie crust.

Another easy trick is William Sonoma sells pumpkin pie filling that I imagine would go straight into the pie crust. I have never tried it. Don't know if it's any good. I almost bought it as a back up in case my pie didn't turn out.
 
I use the Libby's canned pumpkin (not pumpkin pie filling) and follow the directions on the can. I add 1/8 tsp. ground cloves to the recipe. I also use the Pillsbury crust. Really easy, and turns out good every time.
 
My opinion--I would use the canned pumpkin and buy the spices. It's really easy. I like to add a little bit of extra spice and prefer what they call a "hearty" pumpkin pie. The other kind seems a bit bland to me (but still fine).

I would also get a Pillsbury refrigerated pie crust and pre-bake it in the pie dish for about 10 minutes and then put in your filling and bake. It will seem very homemade at that point. The other tip is that pumpkin pie bakes for awhile and the crust often browns up too much for me before the pie is done (especially if you are using one of those frozen pie shells). Just keep an eye on it and if it seems to be getting way too dark and you still have a good amount of time left on your pie, pull it out and put some foil around the edges.

Oh, and I have also heard that the Costco pumpkin pies are good but I've never tried one yet.
I agree with all of this, the pies always come out wonderful.

I have not tried the Costco pies either.
 
Most people love my Pumpkin Pie...
I use the Libby canned pumpkin when I haven't prepared fresh...
Use the recipe on the Libby can..
Add 1/4 cup extra brown sugar.
I take the total amount of spices, and almost double that, using pumpkin pie spice (Kroger?)

More sugar and more spice - delish.
