i am confused about the height situation for this ride. Can my 6.5 husband ride with my 8 year old?

We were just there, didn't ride on it, but I think the answer is yes, IF he rides with your 8 year old. He would not be able to ride by himself. I think we only had one child that met the height requirements, so we joked she'd have to ride it 4 times in a row so that we could all go on it. We didn't though.
 
Guests over 56” tall must be accompanied by a rider meeting the 36” height requirement.

If you are over 56” tall you must ride with someone between 36 and 56” tall. So if your 8 year old is between those heights, then you can each ride (separately) with the child.
 
I go on this often with my 4 year old, yes you need the kid, who usually rides in the front. The main reason for the kid requirement is how painfully slow loading this ride is. It's fairy short, but a fun little ride, the swinging left and right catches people off guard sometimes, though.

They will sometimes (very) temporarily lift the kid requirement if the park is absolutely dead (I.e. Bad weather days), or if you head there first thing after open.
