I heard so many good things about it and really want to try it on our upcoming trip. My question is- is it fried? I guess I have no idea how exactly the potato part is prepared

I don't think it was fried, but the potatoe wrapping was crispy. I think it was roasted in a very hot oven. I must say that my friend and I has decided to split an entree but once we saw the menu we regrouped and split the appetizer instead. I am embarrassed to say that I ate every bite of my steak and fish combo.

If you like wine with dinner, consider the wine pairings. I have never done that, but my friends suggested that I do and I was delighted! The wines matched perfectly with every course, and I was given the opportunity to try wines I had never had.

It's my birthday meal, so we may have to splurge and order some wine ;)

You will not be sorry. The chef split our appetizer in th kitchen, so the presentation was gorgeous! I id nto have teh chocolate martini thing offered on teh menu, but several of the people at our table did, and I tried it. YUM! I must say that FF was one of my favorite meals and I was happy to suggest it to friends who are traveling to DIsney for the first time since they were children. They love good food and good wine, so FF fit teh bill!

Happy Birthday!!!

I don't think the potato-wrapper snapper is fried, either. I'm thinking a batch of the entrees are oven-cooked, then when an order comes in, the individual entree is finished under a Salamander broiler to make it brown, crisp, and hot.

DD29 and I ate at FF last Fall. I had an entree that included a smaller piece of the potato-wrapped snapper together with a smaller Angus NY Strip. Both items were delicious. The NY Strip was melt-in-your-mouth tender. Flying Fish was our best meal at WDW, along with Jiko.

From the info I could find, it looks to be pan fried in oil, and then possibly finished in oven.
