Today for dinner I made diet coke chicken: diet coke (duh), can of cream of chicken and a can of cream of onion. But I cooked a BUNCH of chicken. So there is a lot leftover. Now DH won't eat leftovers, so I need a recipe that will incorporate this leftover chicken into a new dish. Any ideas?

I really like the staff at this hospital waaay better than Sherman, so i'm happy they had to send him here. (I guess things really do happen for a reason)

I know that Consumer Reports does a "best" list of hospitals, or rn homes, I would guess maybe they would do rehab hospitals. I know a little about the ones here in Illinois. Does his mom have a Case Manager at the insurance company working on the case? They typically have a great resource and could give you many options. Especially if you tell her/him you're willing to look out of network for the best care. What's the insurance company you're working with? I still have some contacts in that industry.
Thank you so much! I will go look at that. I looked at US News and World Report, and that's where I found the list with Spaulding on it. Since I am ONLY the daughter in law, I don't have any of the specifics about the case manager or anything. I know she has someone with that title, but I thought it was through the hospital???? I know she has Tufts Health, but I also know that the family can not look out of network. None of them have any savings, and the mother has minimal, if any, only because she had just sold her condo and moved in with her daughter.
On that note, that is where Rob is now, discussing everything that should have been discussed a week ago with his cousins, (the administrator and auditor) and sister. He was absolutely LIVID today, because he got a phone call stating that his mother was being transferred at 2PM to the, far away (out of state), not as great reputation, rehab, that the sister liked, and that Rob did NOT want for his mother.
Oh well. It is really none of my business. And, for my sanity I have to distance myself more. I can only control myself, and what I would do for my own parents. [EDITED]

Ok, so for the happy thing that happened today... Sarah had her P-K graduation! It was the CUTEST Thing! I will have to try to upload photos later. I took my fathers camera, and the battery is dying, so I will have to get the charger from him..... then I will share!
Hey, here's a question.... do dogs get more **eeehhheeemmm*** "guts" as they get older???? My dog is getting pretty old, and he NEVER used to go into the trash, or go up on the table to sniff for scraps, but now it seems he has NO MANNERS!!!!! What is up with that???? He has always been SO GOOD!
