Does the Polynesian have a place to shower and/or dress after swimming? We might want to swim on check-out day.

Yes, but bring a bag that is waterproof to keep your clothing dry. I just took my dry clothes with me, and I had a really hard time finding a spot that wasn't wet to put them down on while I showered.
 
Underneath the volcano is a locker room type area with showers. It’s very damp, though, as was mentioned. We haven’t stayed there in a few years, but the last time we did, there wasn’t a hook in/near the shower area for a towel, which seemed kind of strange as the bench (the only place to really leave a towel and clothing) is across the locker room, several feet away. I threw my towel over the entrance to the shower area; it stayed pretty dry and then took my clothes into a restroom stall to get changed.

If I recall correctly, there are two shower stalls with curtains. There is a bench outside of that. I left my stuff on the bench put the towel over the curtain rod. I dried off, wrapped the towel around me and grabbed my clothes and put them on in the stall. I felt ok privacy wise, I just wished I had brought something to keep my stuff dry. I have a waterproof backpack that would have been perfect for me and my daughter.

It’s a private shower with a curtain or door of some kind (not the open type intended for rinsing before swimming). I recall there were at least two of these private shower stalls. It just seemed weird to me that there wasn’t a hook outside or inside the shower stall to put a towel on, and the only other place for one (aside from over the curtain rod) was a damp bench several feet away. The whole locker room felt like there was water everywhere, and we couldn’t find a dry place to put our things down. I’ve spent a considerable amount of time in pool locker rooms (I’m a former competitive swimmer and still swim several times a week), but this one seems like it somehow accumulates more water than others. The backpack @AliceIn described sounds perfect!
 
The bathrooms under the volcano have the entrances under/behind the waterfall. The floor is therefore covered with the elusive backside of water.

There are also bathrooms at the Oasis Pool. I cannot remember if it has shower stalls or not. I do recall the floor being much drier than the one at the Lava Pool.

Confirming there are no showers in the Oasis Pool bathroom. But yes, that bathroom and the other newer bathroom at the Lava Pool (not the one under the volcano) are much drier/nicer for changing!

The one by the Barefoot pool bar? It’s a drier place for changing for sure, and (in my opinion) an overall nicer bathroom. The last time we stayed at the Poly, though, which was a couple of years ago, there weren’t any showers in that bathroom. It would be perfect if there were!

Yeah, no bathrooms in that one. Wish there were. That volcano bathroom/shower has always been rough!!!
