Planning a winter holiday trip

We are trying to plan a Disney getaway for just the husband and myself. The dates we have to play around with are December 27th-January 6th (we would likely only stay about 5 nights). We've been to WDW with our kids several times, but this is our first time sans kid and over the holidays. We would love to see the Christmas decorations, but we know the crowds are insane from the 26th-Jan1. We were kind of thinking January 1-6th (and even debating between Disneyland or WDW) but wondered what its like with them taking decorations down (i.e. will attractions shut down, etc.). I assume during this time of year, we should not plan on using the pools? I assume its too cold, etc.?

Any advice or suggestions from those who have went during this time appreciated! We are so excited for an adult only trip t 10 years:-).
 
Christmas decorations are generally up through the first week of January at least.

January 1st is still pretty insane with crowds but after that it generally calms down as children have to go back to school.
So yes I'd suggest January 1st-6th if your dates are no more flexible that you can go before Christmas or a couple days after New Years.

I've never been to Disneyland during that time of year so I'm unaware of exact temps there but at Walt Disney World the temps can fluctuate quite a lot.
It may be a high of 55F or it may be a high of 85F.
 
We were there January 4th to the 14 in 2013 and i know everything was still decorated at least until the 8th. Going the 1st of January you are sure to see everything. A must do is going to the Grand Floridian to see the Gingerbread house. And believe it not it was warm enough to swim a few of those days.

Not typically, but there might be a lingering storyteller in Epcot, if I recall, in the countries where celebrations go beyond New Years.
