I understand their dining is a bit different than most value/moderates and are considering staying here, but will be on the ddp and likely have a few lunches and nightly snacks at the resort.
We have been on the dining plan three times at Fort Wilderness, and I'd have no hesitation to do it again. For regular one credit table service, you have Trails End which is buffet for breakfast and dinner and regular table service at lunch. Counter service options include PJs Southern Take Out for breakfast, lunch and dinner https://disneyworld.disney.go.com/d...rt/p-and-js-southern-takeout/menus/breakfast/ and Meadow Snack Bar at the main pool for lunch/early dinner some nights as well. Hoop de Doo and Mickey's Backyard BBQ are more like dinner shows are are 2 TS credits per person per meal but include entertainment as well as the meal. Hoop de Doo tends to get more favorable reviews than the Backyard BBQ. There is no food court so your counter service options aren't massive, but what's offered is quite good. Occasionally we'll take a boat to the Contemporary to eat over there at one of its CS or TS restaurants. Pretty easy to do although it does take time.
As far as using your refillable mugs--you can fill them up at Trails End/PJs Southern Take Out and at the main pool for cold beverages or inside the Meadows Trading Post (near the main pool) for hot beverages.
@ilovebassets did a great job of listing your options. There is also a "Chuck Wagon" which is available for dinner. It has things like cheeseburgers and salads and snacks.
