My husband planrted 8 different peppers in our garden and I don't know what to do with them. We have hot and sweet banana, tabasco, jalepeno, green, pimento, red hot cherry and one other I can't think of. Any recipes for pickling or canning? I also have basil and thyme and would love to make Christmasgifts from these, like oils or vinegars.

My canning books are packed away so I can't look anything up for you. Sorry. :(

However, I just wanted to remind you to wear kitchen/rubber gloves when handling your peppers for whatever method you do use. I had a good friend who ended up at the ER because she didn't bother "for just a few" - which to her was a couple dozen. She had severe burns on her hands that were quite painful. Ordinary amounts for dinner recipes are okay - it's the larger amounts that are the problem.

How about making some pesto? I'm pretty sure that you can't preserve it by canning, but you can freeze it.

As for vinegars...check your local library for a copy of Carla Emery's Old Fashioned Recipe Book. My copy is packed away with all my recipe books, but I know she has recipes in there for making a variety of vinegars. I'm not sure but I think it's out of print now, but it's a book on homesteading - how to raise & butcher liverstock, grow & preserve almost anything, etc.
