I'm hoping someone here might be able to help me out. I think I might be lactose intolerant and my doctor is having me go seven days with absolutely no dairy. The only problem is that one of the seven days is my upcoming birthday. I really want chocolate cake w/pbutter frosting. Does anyone have a good recipe for this? I'm not sure what the ingredients are for the frosting. If it contains any dairy, are there any substitutes for it?

Thanks.

Sue,

I'll tell you what I'd do, and you can see what you think. I'd take a can of vanilla frosting, and I'd mix in enough peanut butter till you get the right flavor. In fact, I've done that before in a pinch. I'm a big fan of peanut butter frosting, and it's really good when you do it this way.

However . . .

I'm not sure of the exact contents of that can of frosting. I just happened to have a can of Duncan Hines in the pantry. I looked at the label carefully and didn't see any mention of milk products. Instead, I see sugar, hydrogenated vegetable oil, water, corn syrup, corn starch, etc. You might look at a can and see what you think.

And, just FYI . . . most frostings I've made from scratch are made with some combination of powdered sugar, butter, flavorings, and enough warm milk to give the proper consistency.

Good luck, and happy birthday!! :wizard: (pretend this is your party hat, OK?)

Pat
