Peanut Butter Cookies

I want to make some cookies. Does anyone have a Peanut Butter cookie recipe they care to share? I like them really chewy and softish rather than crisp. Thanks
 
I was having a conversation with someone about peanut butter cookies the other day. Surprisingly, peanut butter cookies are a recipe that can be easily messed up (in comparison to chocolate chip cookies) if not done right. They can be too dry, too nutty, not flavorful, too crumbly, etc. They are a quirky cookie, but I sure do love them, no matter how they taste.
 

My wife just made peanut butter/chocolate chip bars yesterday. Sorry, I do not have the recipe.

My favorite peanut butter cookies are the Peanut Blossoms with the Hershey Kisses on top. They're nice and soft. I always have them at Christmastime when they don't have any calories in them though.

My kids have always liked this recipe. I have no idea where I picked it up at, but I've had it since I was in high school.

Cream 1/2 c shortening, 1 c. honey, 1 c. peanut butter and 2 eggs.
Sift together (I never do) 3 c. flour, 1 c. sugar (can split between white and brown or use just one or the other), 1-1/2 tsp baking soda, 1 tsp baking powder, and 1/2 tsp salt. Mix into wet ingredients.
drop onto the pan, do the criss cross thing. bake 350 8-10 min.
 
I like the pb cookie recipe in Emeril Legasse's kids cookbook. I have no idea of the oven temp or baking time, but the recipe is simple: 1 egg, 1 cup of sugar, 1 cup of peanut butter. The come out crunchy around the edge and chewy/soft in the middle. YUM. If my knee wasn't being a PITA tonight, I'd make some NOW!
 
I made the cookies that Wen suggested, Thick and Chewy Peanut Butter cookies. They were really good and DH said he really liked them. I made these so he could have them after his day at work and he stopped and got me a cheesecake on his way home.....true love!!!

I scoured the Internet to find those. My dad didn’t/couldn’t eat very much and he was very specific about the texture. They were a huge hit with the whole family.

You have to hang onto a man who brings you cheesecake!

If you want soft and chewy peanut butter cookies, bake them at 300 for 15 minutes.
 
Easiest recipe
1 cup of peanut butter
1 cup of sugar
1 egg
mix it all up and form into balls. Place on a baking sheet and use a wet fork to press them down a bit. Bake on 350 for about ten minutes. Timing really depends on the size of the cookies- they’re done when they just start to crack. Remove them from the oven and let the sit for a couple of minutes. (this could be the time to press on some Hersey kisses or chocolate chips If you desire) remove them and let them cool completely on a wire rack.

Very soft cookie, I store them in a covered container and they stay soft)
