True, but should those who do go at those times be penalized for doing so? I guess I just don't see a justification for the higher prices. Most of the table service restaurants operate at or near capacity all year round. It's not as if Disney's expenses for running those restaurants increases during holiday periods.

Actually they probably do increase. There is a holiday that week that Disney has to pay it's employees for. If the employee doesn't work they get paid, if they do work they get paid for their hours worked and get paid for the holiday also.

During seasons of high demand, Disney raises the prices at most of the prix fixe restaurants.
Below are the restaurants and dates when you can expect to pay more. On average, it's $4.00 more per person ages 10 and up, $2.00 more per child ages 3 -9.

Disney raised buffet prices for like 6 weeks in a row (from Memorial Day to July 4th). Most of their employees would be servers - so they might have paid one or two days of extra pay - which would be little on a servers salary.
I think it's a bad idea to raise the prices - but I just stay away from buffets during those time periods.
