Parking at Epcot for dinner - need advice

My husband and I have booked a special anniversary dinner (along with our 3-year old) at the Mexican pavilion later in late September - reservation for 6:15 p.m.

We were hoping to just drive to Epcot and park somewhere.We'll be driving from the Wyndham Bonnet Creek Resort on Encinas.

So a few questions:
How long would it take us to get from hotel to pavilion by car?
Where is the closest parking to the pavilion?

Note: We plan on getting a Park Hopper pass as we will be spending that morning at the Magic Kingdom, returning to the condo for a nap, and heading out to Epcot afterwards for dinner. I belive an admission pass is needed, even if it is for dinner right?
 
Yes, you will need park admission..you're entering the park. You can park right at Epcot...be sure to hold onto your parking slip from MK..that way you only pay once!!!
Then, just walk through Epcot to WS and to Mexico. It should take you about 15 mins to walk to Mexico. When you cross over into WS, go left...Mexico will be the first country you come to that way.
 
G4T has given you a good answer. I'd just suggest you allow 30 minutes from the time you leave your hotel to getting to Mexico - perhaps a bit longer. The drive from the hotel to Epcot will be about 15 minutes (getting to car, drive, stopping to pay for parking and then actually parking) and then it will take around 15 minutes to go through bag check, turnstiles and walk to Mexico.

The restaurants ask that you be there 15 minutes before your assigned time.
 
You should park at the main Epcot parking lot. Give yourself about 20 minutes from the time you park the car to the time you want to arrive at Mexico. Its a pretty decent walk and you have to account for going thru the bag line, entrance gate, etc.

A side note: You're probably already aware of this, but since you'll be at the Magic Kingdom earlier in the day, make sure your tickets are park hoppers. If your tickets are one park per day, you can not use them to enter Epcot after visiting MK the same day (and, no, you can't use another day on your ticket to get into Epcot)

The poster noted in her op she has hopper passes so she is good there.
