the park hopper option lets you enter as many parks as you wish on each day of your ticket. So if you have a one day park hopper, you can visit any combination of parks that day. A multi-day park hopper ticket will allow you to visit as many parks as you wish on each day of that ticket.

Park hopper applies to either all days or no days of your ticket. You cannot choose it for some of your days.
