Palo - which night

I don't know why I am having a hard time deciding which night to go to Palo and was hoping to get some suggestions here. We haven't been on the Magic since the new Rapunzel restaurant was added and we definitely want to try it.

We are on the 5 night cruise Disney Magic Dec 28, 2018. The itinerary is
Friday 12/28 sailing
Sat 12/29 At Sea
Sun 12/30 Grand Cayman
Mon 12/31 At Sea
Tue 1/1/19 Castaway Cay
Wed 1/2/19 - home

We plan on reserving Palo Brunch for 12/29 first day at sea.

Does anyone know what beverage tasting options they may have during this cruise?

We always choose to do it on Pirate night as we dont love that menu in the main dining rooms. Then we still have time to pick our little girl up at the club and see the pirate deck party and fireworks.

We pick a night that isn't the restaurant's normal/rotational menu so we don't miss the individual experience of the restaurant (we've done Pirate Night the last two times).

Thanks - I was struggling with it since normally the pirate night is the 4th night and that is NYE but maybe they will change it up.
