You'll need
Double boiler/ similar setup
1 can coconut milk
2 eggs or 4 egg yolks
4 tbs vanilla extract
(this is a good base recipe, I usually need something to make it sweeter as with just this, it's a little too bland for me.)
You can also add one or more of the following:
1/2 cup fresh/frozen fruit, whole or pureed
3 tbs raw honey
1/4 cup mint, chopped nuts, or even chocolate chips (not Paleo or Primal but tasty)
Bring water to a boil in the bottom of the double boiler, you want it to be at a steady simmer, not a rolling boil. The website says to not let the bottom of the double boiler touch the surface of the water but mine did and I had no problems. Pour your coconut milk into the pot and heat it, but don't let it boil. If you're adding mint or honey, mix it in now.
In a separate bowl, whisk egg/yolks. Temper the eggs; add one ladle or cupful of the hot coconut milk to the eggs, whisking vigorously and pouring slowly. We need to bring the eggs up to the temperature of the coconut milk, but slowly so they don't scramble. After a few cupfuls, slowly pour the eggs into the double boiler, still whisking vigorously.
Keep whisking vigorously (arms will be tired, that's ok. You're earning your treat!

) to form a thick custard. I've never made custard, I whisked for a few minutes until the mixture seemed thicker and coated the back of a spoon better than plain coconut milk.
Cool on the counter, or in the fridge. If you're adding fruit, nuts, or chips, add it once the custard is cool enough to comfortably stick a finger in. Next time I make this, I'm gonna try adding the fruit before this chilling process, I'll report back with my findings.
After the initial cooling/addition of flavorings, pop it in the freezer. I spread mine out on a small cookie sheet, and stirred it up every twenty minutes. In less than an hour, it was all frozen. We served our first batch up with fresh berries; you'll get a very creamy, smooth-textured ice cream but the lack of sweetness really threw me the first time, so bear that in mind!
