Paleo for the Parks!

I'm also excited, I'm making coconut milk ice cream for a friend tomorrow, I've only made it once before so I'm hoping it turns out well!

Good luck and let us know how it comes out! I love regular coconut ice cream so am very interested in the coconut milk version.
 
Wickey's friend, I'm SUCH a taco fan! I've found that it's the seasonings & spices in the meat that I crave, not the cheese. So taco salad = perfect delish for me ;)

OK -- I need to know how to fix this! I LOVE ice cream but I never eat it anymore.

I fixed stew meat with mushrooms, onions, beef broth and a little red wine for dinner last night. You cook it low and slow in the oven, so it's very tender! I have left overs for lunch too -- with asparagus and green beans. It is lunch time yet?

You'll need
Double boiler/ similar setup
1 can coconut milk
2 eggs or 4 egg yolks
4 tbs vanilla extract

(this is a good base recipe, I usually need something to make it sweeter as with just this, it's a little too bland for me.)
You can also add one or more of the following:

1/2 cup fresh/frozen fruit, whole or pureed
3 tbs raw honey
1/4 cup mint, chopped nuts, or even chocolate chips (not Paleo or Primal but tasty)

Bring water to a boil in the bottom of the double boiler, you want it to be at a steady simmer, not a rolling boil. The website says to not let the bottom of the double boiler touch the surface of the water but mine did and I had no problems. Pour your coconut milk into the pot and heat it, but don't let it boil. If you're adding mint or honey, mix it in now.

In a separate bowl, whisk egg/yolks. Temper the eggs; add one ladle or cupful of the hot coconut milk to the eggs, whisking vigorously and pouring slowly. We need to bring the eggs up to the temperature of the coconut milk, but slowly so they don't scramble. After a few cupfuls, slowly pour the eggs into the double boiler, still whisking vigorously.

Keep whisking vigorously (arms will be tired, that's ok. You're earning your treat!:rotfl:) to form a thick custard. I've never made custard, I whisked for a few minutes until the mixture seemed thicker and coated the back of a spoon better than plain coconut milk.

Cool on the counter, or in the fridge. If you're adding fruit, nuts, or chips, add it once the custard is cool enough to comfortably stick a finger in. Next time I make this, I'm gonna try adding the fruit before this chilling process, I'll report back with my findings.

After the initial cooling/addition of flavorings, pop it in the freezer. I spread mine out on a small cookie sheet, and stirred it up every twenty minutes. In less than an hour, it was all frozen. We served our first batch up with fresh berries; you'll get a very creamy, smooth-textured ice cream but the lack of sweetness really threw me the first time, so bear that in mind!

Oh, I am so happy to find this thread! I'm a fellow Paleo-er (I fall somewhere between Primal and Paleo), and I have been so nervous about my upcoming trip to WDW in Sept. I know it's still a long way off, but I'm just so excited!

I know most people say not to worry about what you eat because it's a vacation - but even on my cheat days/meals, I feel so sluggish, bloated, and exhausted afterward. So this should be an interesting experience! So many awesome temptations.... Hopefully all that walking and excitement will balance me out. :)

I did get the "Quick Service" mean plan for my husband and I (he's not Paleo, but tries), I hope that still gives lots of options.

Man, this thread is making me hungry! Paleo tacos are one of my favorite quick and easy meals - I use romaine lettuce as the "shells" for mine, gives that yummy crunch like the corn shells do!

I've had a bad few days. Big birthday week in my house and office and cake keeps calling me! I had a really bad sugar crash and an upset tummy last night though so I think I learned my lesson!

My awesome hubby made me almond and coconut flour pancakes for breakfast this morning. I put on a little bit of honey and they were super delicious! I feel so much better today now that I am back on track.

Big weekend for me too . . . my oldest DS is getting married in June. He's the one that started us on the Paleo-friendly path. I admit to eating about 1/4 of a piece of pound cake last night at the family bridal shower and another 1/4 of a piece at today's regular lady's shower -- but no bun on the burger at the family shower last night!

I go to Disney at the end of this month -- :cool1::cool1::cool1: -- and I don't know how I'll do. I know I should try, but this is DISNEY we're talking about. :rotfl:
 
It is really hard to do Paleo on vacation-you just want to eat random crap! I know I've been going through all the menus to find options. I came up with good news, great news, and bad news.

The great news: You CAN eat Paleo (and Primal) in the parks!
The good news: You won't be eating the same exact thing all the time.
The bad news: You will still have a fairly limited variety of choices, and if you are doing a CS-based plan, it will be more difficult with fewer choices. Conversely, lots of ADR's will give you more Paleo options but will also be more expensive.

I'm planning out what my 'cheat' items are going to be; a Dole Whip is one, for sure. I love pineapple, and I'll probably just split one with DH so it won't be TOO awful, right?:rotfl:
School bread will be another. Although that one, I may not split with DH. He can get his own if he wants one!

I was so glad to hear that there will be kiosks throughout the park selling fruit; knowing I can get some apples or grapes or something to eat that's not fried, dough, sugar, salt, or any combination of the above gives me hope for having a healthier, happier vacation!
 
I eat a paleo diet, have for a few years, and have found helpful tips from Robb Wolf's sight, on what to eat when on the road. In general, when away from home, I try to stick to the diet as much as possible, but will stray slightly sometimes. It is easy to avoid grains at restaurants, but I've found some dairy can be hard to keep out of processed foods.
