OT: What to do for supper with chicken?

All this chicken talk made me cook one last night (just me, how sad DH is out of town). All I did was put a generous amount of McCormick jerk seasoning on both sides of a chicken breast and pan fried it in Pam olive oil spray...sliced it up and put it on a salad...yum!
