OT: Can I please get your Christmas breakfast casserole recipe?

On some threads people have been mentioning their breakfast casseroles that they eat on Christmas morning. This sounds just heavenly!! I can imagine it smelling wonderful as we open presents...and even better if you make it the night before! Does anyone have any easy recipes they can share? I would love to make one this year!! Thanks!

I have three really good ones, all the you must make the night before and put in the fridge over night...

a sausage, egg, and cheese
a bacon, hashbrown, egg and cheese
and a french toast casserole

which one would you like?
 
Here you go...

Hashbrown casserole

One large bag of frozen hashbrowns (I like the shredded kind)
1/4 cup chopped onion
1 lb. bacon, cooked
2 cups cheddar cheese, shredded
1 cup milk
6 eggs, beaten
1/2 tsp. salt
1/4 tsp dry mustard

Spread hashbrowns in bottom of 9X13 baking dish, scatter onions on top of hashbrowns, tear bacon into bite size pieces and spread on top on hashbrowns, top with cheese. Mix remaining ingredients and pour mixture over casserole. Cover and refrigerate over night. Preheat oven to 350. Bake, uncovered aprrox 45 to 55 minutes.
 

Here's our holiday breakfast recipe:

Sausage Braid Bread-

1 roll of bulk sausage
minced onion
1/2 block of cream cheese (4 oz)- cut into chunks
3/4 cup cheddar cheese
1 roll of crescent rolls

Brown sausage and drain. Add a couple of shakes of minced onion and cream cheese chunks. Once cream cheese melts, add cheddar cheese and stir until it melts as well.

In the mean time, on a cookie sheet, roll out crescent rolls into one big rectangle (I use a side of a glass because I don't have a small rolling pin). Once you have rectangle, cut each long side of the rectangle into 1 inch strips , cutting in so that there is about a three in wide solid center all the way along the rectangle. Place sausage mixture on the solid center all the way down and "wrap" it by laying the strips acrossed the sausage mixture- If you lay one from one side and then one from the other alternating as you go..it will give the appearance of being braided.

Brush with beaten egg and bake for about 10-15 minutes (until golden) at 375.

Yummy...It looks so fancy and is so easy!! We make two every x-mas morning!
 
This recipe is kind of a pain and pretty time consuming but, I promise, oh so worth it!!

Here you go...

French Toast Casserole

1 1/12 loaves of bread
13 eggs
1 stick magarine, melted and then cooled to room temp.
1 cup Marple syrup (or plain pancake syrup works fine)
2 1/2 cups half and half
1 8oz block of cream cheese

spread the bread slices out so that they dry out, I usually do this Christmas Eve morning on the dining room table and turn on the ceiling fan, flip the slices so that both sides get dry. Once dry, cut each slice into 9 cubes. Place bread cubes into greased 9X13 pan. (they are usually piled pretty high in the pan, this is normal) Cut the block of cream cheese into pieces about 3/4 of tsp. (these don't need to exact, I try for slightly bigger than a marble) Dot cream cheese all over bread cubes. Mix well remaining ingredients. Pour egg mixture all over the bread. You want all off the bread to be completely saturated. (at times, I've had to add a little extra by just mixing another egg or two and some extra half and half) You'll have to use your hands to sort of pack down your casserole. You should have a very full pan of saturated bread cubes. Chill over night.

Preheat oven to 350, bake covered approx. 75 to 90 mins. Remove cover the last 15 mins or so to lightly brown the top. Serve with syrup.


HINT: I've ruined my mixture twice by not allowing the margarine to cool and adding it to the cold eggs and half and half causing it to crystalize. Just to be on the safe side, I let my egss and half and half warm to room tempature and cool my magarine in an ice bath.
 
Ohhh I wonder if I could think up a vegetarian one. The French Toast one sounds good though. Wow but after looking at the ingredients....13 eggs?!?
 
Not sure what you call this, but here goes...

Make it the night before and then put it in the oven in the morning.

1 cup brown sugar packed
1/2 cup (1 stick) butter melted
3 tsp. ground cinnamon, divided
3 tart apples (but I use any kind)
1/2 cup dried cranberries or raisins
1 loaf Italian or French bread, cut into 1-inch thick slices
6 large eggs
1 1/2 cups milk
1 Tbs. vanilla extract

Combine brown sugar, butter and 1 tsp. cinnamon in a mixing bowl. Peel, core & thinly slice the apples. Add the apples and dried fruit to the mixing bowl & toss to coat well.

Spread the mixture evenly in a 13x9x2 baking dish. Arrange bread slices on top.

In another bowl, combine eggs, milk & vanilla and the remaining 2 tsp. cinnamon. Beat with a fork until blended. Pour the mixture over the bread, soaking the bread completely. Cover with foil and refrigerate for 4 to 24 hours.

Bake in a preheated 375 degree oven for 40 minutes, then uncover and bake 5 more minutes.

Remove from the oven. Let stand for 5 minutes before serving.

Note: Use bread that does not have a crisp crust.

Oh my gosh. I am starving now. I LOVE the ones so far. Can I get the sausage, egg, and cheese recipe as well?
 
Thanks for all the ideas! I've been agonizing over what to make this year -- out big Xmas meal is always a brunch. I can't wait to try one of these! :cool1:

sure, this is essentially the same recipe that a pp posted a link to but here's mine....

6 slices of bread, buttered on one side, placed buttered side down in a 9X13 baking dish.

1 lb or so of sausage, cooked and drained
1 1/2 cup shredded cheddar
6 eggs
2 cups half and half
1 tsp salt
1 tsp dry mustard

spead sausage over bread slices, top sausage with cheese, mix remaining ingredients and pour mixture over cheese, chill over night.

preheat oven to 350, bake covered with foil approx 35 mins, remove foil and bake an additional 10 to 15 mins.

NOTE: I feed a large group Christmas breakfast. I usually make 3 lbs. of sausage and divide it between two 13X9 pans of this casserole. To one of the casseroles, I add a very small can of sliced mushrooms and a little diced onion. Kids tend to choose the one without the additions and adults tend to like the one with.
 
What great recipes. Just want to share a quick tip. We adore Maple Syrup and it is so expensive that when I have a large crowd to breakfast I have found that if I buy just store brand regular syrup and add Maple extract about 1/2teaspoon - 1 teaspoon depending on the size of crowd and then warm in the Micro for a while it is just like real Maple syrup.
