Oreo Truffles - question for anyone who has made these.

Ohhh, I've never tried adding extract, will add that to the list for this year!

FOr those without a food processor - I have double bagged them in ziplocs and let my kids go to town pounding them. Then I just throw the block of cream cheese in the bag & mush it all up. They don't come out quite as fine but still very yummy!

How do others dip theirs? I can't seem to get that part down easily. Sometimes I use a fork but then get fork marks in them. Or I just drizzle the chocolate on top if they're not gifts but I want to make some pretty ones for DD's Scout cookie exchange.
 
I've made the truffles before and they are yummy. Here's another sweet treat that is really easy and very addicting! Hope no one minds my jumping in with this...just thought I would share another goodie.


Rolo Turtles

Place a small unsalted pretzel on cookie sheet.
Top with one Rolo candy (choc/caramel)
Bake in 250 degree oven until Rolo is soft and starts to melt.
Remove from oven and press a Pecan half into the melted Rolo.
Cool in fridge until set.

A spin on this one (these are always gone in a flash at the office holiday party): I use a salted mini pretzel; Hershey's kiss instead of the Rolo; and top it with a red or green peanut M&M.

That salt from the pretzel with the chocolate and the peanut M&M.... :cloud9:

I haven't made these either but I'm thinking along the lines of a fondue stick or a long toothpick.
 
When I do my truffles I also add mint extract. On top I use some crushed Andes Peppermint Chips, or finely crushed candy canes. Makes them very "Christmassy".

I can't wait to try the nutter butter ones. I tried on my own, but they were too dry. Now I know that adding peanut butter would make it perfect!

I'll be bringing some of these to work next week as gifts...should I tell everyone to keep them refridgerated???

I made these one year for the guys at DH's work and they were a huge hit (though I too used salted pretzels...yummo!). However, there were a few people he worked with that had mild nut allergies. So rather than use pecans on some of them, I squished the Rolo down with another pretzel, then drizzled chocolate over it. Quite yummy too :)
 
Slightly off-topic

I am planning to make truffles (coconut & peanut butter) and used to use wilton chocolate (10+ years ago) but I found recipies call for semi-sweet chocolate chips and parafin.

Using wax in my food sounds kind of gross. Can I just dip in the chocolate chips or what can I do? I hear people use 'bakers' chocolate - how does that differ from the Giradelli bakers chips I bought today?

TIA - Kitchen challenged.

My recipe for buckeyes (peanut butter balls with chocolate coating) coating calls for paraffin. You can't tell there is paraffin in there. It isn't waxy.

Right we have the oreos (icing and all) all blended up now just waiting for hubby to get back from shops with white chocolate and we will be all go.

Will let you know how they all turn out.

PS will you people stop posting things that include ingrediants I can't get in the UK. I am dribbling on my keyboard with no hope of making these things. ;)

It is an American site I have never seen ABC pretzels over here, they aren't as big on pretzels as you guys seem to be. But these reindeer are just too cool.

I knew he was joking and just giving me a hard time. Hard to do a comeback on the internet but I wasn't offended or anything.

I SOOO want to try these. Do you know how she makes the balls? Does she just make a cake and use a melon baller?
 
I made the truffles last night. I used Target Market Pantry "oreos" (double stuff). They came out very tasty! I bought the Baker's melting chocolate in the cup, and it worked great, but I ran out half way through. Melted some semi sweet chocolate chips to try to finish the batch, and it was a disaster. I ended up storing the un-dipped truffles in Tupperware in the fridge until I can get back out to the store for another cup of the dipping chocolate.

Lesson learned: don't use chocolate chips to dip these in!

The taste was fine, but the semi-sweet chips I used didn't melt smoothly enough or thin enough for dipping. It was too thick. All was not lost though...I rolled some pretzel rods I had into the chocolate and covered them in sprinkles.

The Bakers dipping chocolate that comes in the cup had the right consistency for dipping the truffles.
 
That's why you add a little shortening to the semi-sweet chips - to make dipping easier.

I made the oreo ones last year and a co worker fondly named them "death balls"! He said the only thing that would make them better would be adding liquor.

Anyone try that? Obvioulsy I would keep them seperate from the general consumption cookies!

What type of liquor would I use? how much?
 
I tried to find the ABC pretzels at World Market yesterday and didn't see them.

I make these every year. Huge hit.

1. I almost always use store brand oreos unless I can get regular oreo's on sale. Then I use the double stuff or mint. If using store brand, I just add mint extract.
2. I don't have a food processor so I just use my blender. Works great.
3. I dip in white or milk chocolate. I use the almond bark and melt it in the microwave. The key is to not overmelt. I do it in 20 second increments, when the center gets kind of squishy you need to take it out and stir, stir, stir.
4. After dipping I drizzle with melted red or green chocolate wafers. I also will add crushed candy canes or non pariel/sprinkles to make them look festive.
5. I also refrigerate until about 30 minutes before serving. They keep at least 3-4 days in the fridge!
6. Tip....do not make the balls too big. Once they get dipped and decorated they are even bigger. It is a very rich treat to consume, so make them small.

They turn out beautiful EVERY year.
 
These are amazing!!! I normally make them with mint oreos and they always turn out fabulous.
 
This thread is making me so hungry! I cannot wait to make these w/DD this weekend for her Scout cookie exchange. I want to try adding the extract to some & will have to look for mint oreos to try too.

For those that add extract, how much do you use? I know it won't take much mint & hope to just find the cookies instead but what about raspberry? That sounds so yummy - thanks to whoever posted that tip!
