You could stay at AOA or All Star Music in a family suite.
You could book a cabin.
You could also stay in any resort and book 2 rooms.
You could stay in a room that sleeps 5 as long as one of the kids is under 2.
You could book a DVC accommodation that sleeps 6+
To me the perfect place to stay at your stage of life right now is the cabins at the fort. make sure to get a golf cart rental and it will be one of your favorite family trips. Connecting rooms are not guaranteed at WDW. If you are willing to take a risk of splitting up 1 parent + 2 kids in each room, you can book 2 rooms at any resort.
If you want to rent DVC, do some research and be sure that's a good option for you. Generally it's refundable.
What hotel(s) are you describing?Depending on budget look into a Premium Room/Alcove and add a connecting two bed room. Some of these have two beds connecting to two bed rooms and others allow for a roll away in the suite and then add the room with 2 doubles. It is a lot of space to spread out and you get the additional benefits of deluxe hours etc.

EDIT: I'm thinking of point rentals. Booking the DVC villa directly from Disney does have the normal Disney cancellation policy, I believe.

If I were to recommend, I’d get the Family Suites in Art of Animation. It is slightly steeper in price but it does get the job of having such a large group accommodated.
