Just thought I'd bump this to the first page again, because it is that time of year!! I made these today....man oh man are they good!!I used maple to flavor my icing this time though, it's yummy!! and no raisins either.
Thank you for bumping this up. I had forgotten that I subscribed to this thread last year. I didn't get a chance to try it last year, but I will this year. I plan on bringing them with us on our trip to the VGC in October. It would make a nice breakfast before we hit the parks.

I was just on the AP site and I found that disney is giving us the recipe for their pumpkin muffins they sell during the holidys...the one where they pipe in cream cheese frosting ...that is the best thing ever and I always look forward to it ..![]()

The recipe calls for unsalted butter. Has anyone used margarine? I want to use ingredients I already have.
Do I use 1/2 cup of chocolate chips instead of the 1/2 cup of raisins or more choco chips?

Every time this thread is bumped, I remain so grateful to Disney for putting the recipe online (at the time I was an AP holder). Why? Because it's how we discovered that cinnamon is VERY helpful for DH's blood sugar! It's in the frosting and in the muffin, and DH had just been diagnosed with diabetes (though his endo hardly thinks it's an issue now, because he controls it with diet and exercise so well) and was in the "afraid of food" phase. I was in the "I caused this b/c I cook for him" phase, and for whatever reason decided to make these. DH decided to have one, and his waking blood sugar was LOWER than his previous day's after-meal blood sugar. It was the cinnamon! Excellent discovery and has helped him tremendously.![]()
