OMG they are giving us the pumpkin muffin recipe

I've got some in the oven right now! As soon as I saw the thread, I knew I needed to make these!

Just thought I'd bump this to the first page again, because it is that time of year!! I made these today....man oh man are they good!! :thumbsup2 I used maple to flavor my icing this time though, it's yummy!! and no raisins either.

Thank you for bumping this up. I had forgotten that I subscribed to this thread last year. I didn't get a chance to try it last year, but I will this year. I plan on bringing them with us on our trip to the VGC in October. It would make a nice breakfast before we hit the parks.

:thumbsup2 the icing is very good, but takes them to being more of a desert or cupcake than a muffin. If I were going to have them for a breakfast item, they are so rich and moist and sweet you don't need the icing. mmmmm time for a tea break, and one of these right now!! :rotfl:
 
Yes, I think you are right, smiley_face2, I will skip the icing, but will bring some with me to make the muffins a dessert later in the week. Enjoy your muffin!

the icing recipe they give in the original makes a LOT of very soft icing. I used 1/4 cup cream cheese, 1/2 cup butter, 4 cups icing sugar, and this time 1/2 tsp. of maple flavor instead of vanilla. Last time I used cinnamon which was really good too! even then I have some left over for next time....and there will be a next time! :lmao:

Every time this thread is bumped, I remain so grateful to Disney for putting the recipe online (at the time I was an AP holder). Why? Because it's how we discovered that cinnamon is VERY helpful for DH's blood sugar! It's in the frosting and in the muffin, and DH had just been diagnosed with diabetes (though his endo hardly thinks it's an issue now, because he controls it with diet and exercise so well) and was in the "afraid of food" phase. I was in the "I caused this b/c I cook for him" phase, and for whatever reason decided to make these. DH decided to have one, and his waking blood sugar was LOWER than his previous day's after-meal blood sugar. It was the cinnamon! Excellent discovery and has helped him tremendously. :goodvibes
 
Ahhh, so glad to see this recipe back up! It's about that time to start baking!

I made this recipe last Fall and made it at least 2 more times through the Winter and it was THE BEST!!!! :banana: :cloud9:
 
I was just on the AP site and I found that disney is giving us the recipe for their pumpkin muffins they sell during the holidys...the one where they pipe in cream cheese frosting ...that is the best thing ever and I always look forward to it ..:banana: :yay: :cheer2:

The recipe calls for unsalted butter. Has anyone used margarine? I want to use ingredients I already have.

Do I use 1/2 cup of chocolate chips instead of the 1/2 cup of raisins or more choco chips?

In my post above, I mention the icing recipe and I said I use 1/2 cup butter, but in reality I use 1/2 cup of good quality margarine. :thumbsup2
