OMG they are giving us the pumpkin muffin recipe

I did the recipe with all applesauce and they were so moist. I plan on making more this w/e...this time with the icing!!
 
Ok guys...I read through all the post and not only made them with chocolate chips but made them regular size AND mini's.

I did a double batch on the muffins and was able to make 18 muffins and 24 mini's. I'm working on the icing and will let that chill overnight and the muffins cool overnight as well.

I'll take pictures and taste them tomorrow and post :) I'm STILL skeptical about the chocolate and pumpkin together...but you all LOVE it...so I tried it :)

Just wanted to let everyone know I made these today, and there were

AWESOME!

I followed the exact recipe, except I let them stay in the oven 5 minutes longer than called for.

They came out moist and delicious!
 

Just to add to this thread:
Pumpkin & chocolate are 'da bomb'! Also, if you like nuts, I'd add some walnuts or sliced almonds to the muffins. Quite tasty!

For those who don't have a pastry bag and tips, try putting the frosting into a ziploc bag, twist, and cut the corner off to squeeze into the center of the muffins. Just remember to only cut as large size as you need, and not to hack off alot!

I do these muffins with pecans instead of raisins and everybody loves them! I made them yesterday as bars in a jelly roll pan for my daughter's class, sprinkled with cinnamon powdered sugar instead of icing. They were really tasty, still moist. I think the recipe would work equally well in a bread pan and glazed with a thinned down version of the icing. The big argument in my house has been whether they are muffins or cupcakes. lol!
 
I have not tried the recipe, but i did eat the muffins at the park. They are delicious my only complaint was they did not have enough cream cheese frosting (I love cream cheese).
I did however find a pumpkin bread mix by pillsbury in our store. On the box it has a a pumpkin cheescake muffin recipe that is AWESOME!!! I was thinking about making the pumpkin muffins and then topping them with the cheesecake mix. If it turns out I will let you know.
 
I made these on wednesday and loved them!! I think they'll be better without the raisins though. Chocolate will be in my next ones! But they were soooo moist and very tasty! I am excited to make them again. :)
 
I finally got to make these day. Yummm..... The are so moist. I used chocolate chips instead of raisins like other's suggested. And thanks to whomever said to make only 1/2 of the frosting, I did and still had leftovers.
 
Just thought I'd bump this to the first page again, because it is that time of year!! I made these today....man oh man are they good!! :thumbsup2 I used maple to flavor my icing this time though, it's yummy!! and no raisins either.
 
I was just on the AP site and I found that disney is giving us the recipe for their pumpkin muffins they sell during the holidys...the one where they pipe in cream cheese frosting ...that is the best thing ever and I always look forward to it ..:banana: :yay: :cheer2:

so now I wont have to spend $3-$4 on a muffin at DL in a couple weeks...ah who am I kidding:rotfl2:


Pumpkin Muffins with Cream Cheese Icing


Pumpkin Muffins:
2 cups pumpkin purée (canned)
1½ cups granulated sugar
3 large eggs
¾ cup canola oil
1½ tsp. vanilla extract
1 cup all-purpose flour
¾ tsp. salt
1½ tsp. baking powder
¾ tsp. baking soda
¾ tsp. cinnamon
¾ tsp. ground cloves
¼ tsp. ground nutmeg
½ cup raisins


Preheat oven to 325ºF.
In a large mixing bowl, whisk together pumpkin, sugar, eggs, oil and vanilla until well blended.
Sift together flour, salt, baking powder, baking soda, cinnamon, cloves and nutmeg over the pumpkin mixture and whisk until just blended. Over mixing may result in less tender muffins.
Fold in the raisins until consistently distributed.
Portion mixture into muffin pans and bake at 325ºF for 25 minutes.
Insert a toothpick into center of muffin and remove. If toothpick is clean, the muffins are ready. If not, allow muffins to cook an additional 1-2 minutes or until toothpick is clean.
Allow muffins to cool for 30–60 minutes.

Cream Cheese Icing:
1 cup unsalted butter
1½ cups cream cheese
1 tsp. vanilla extract
2 cups powdered sugar
½ tsp. cinnamon


Allow cream cheese and butter to soften at room temperature for about an hour.
Mix cream cheese and butter together until smooth.
Add vanilla extract, powdered sugar and cinnamon, and mix until well blended.
Remove from mixer, and cover and refrigerate until needed.
Fill a pastry bag fitted with a star tip with icing.
Poke a hole into the center of each cooled muffin and squeeze icing directly into the middle of the muffin, finishing with a rosette on the top.

Special Tip: This recipe makes a generous amount.
