OMG they are giving us the pumpkin muffin recipe

haha I forgot all about this thread....I saw it and thought..who wrote that and realized it was mine....man I bet you had to search for it....but that reminds me...I have been on a "lifestyle change" for about 4 months now and Ive lost 61lbs to date...Im not missing out on anything...I hwwwwave done so much research on this and found fabulous recipes that I dont miss fast food and every so often I do go out and eat but not for the most part....anyways, I have been making these recipes and I found one called spiced and iced cupcakes no its not exactly as great as the pumpkin muffins DL makes but they are really good, have cream cheese in the icing and are only 112 calories....I would be more than happy to post the recipe if anyone wants it:goodvibes

I would love the recipe!! The pumpkin muffins are delicious, but low calorie can also be delicious too!

Congratulations! 61lbs is amazing! I'm also dieting, but just starting. I have lost 12 lbs since the beginning of Oct. :goodvibes I have made the pumpkin muffin recipe last year and really liked it. I'd love your alternative recipe. I'm all about the calorie counting these days.

We thank this recipe SO very much. It came out shortly after hubby was diagnosed with diabetes, and while I was in my own personal mourning period for changing the way I cook (we were so scared) I couldn't help make these, and Robert couldn't help but eat one...and his blood sugar was *lower* the next morning. We discovered, thanks (again) to Disneyland, that *cinnamon* is his magic bullet with his blood sugar!

He now considered 110 to be an undealable high, and he has to go be alone until it lowers, because he becomes such a grump and feels so bad...he's normally in the 90s through the day...all with diet and exercise...and we started figuring all of that out thanks to these muffins.

Now...we found out that he has more going on with his endocrine system than that, and the blood sugar in Sept '08 might have been a "hey look at me look at me!!!" way to get him to the endocrinologist, but still, knowing that cinnamon (which is in the muffin AND the cream cheese frosting) is so powerful with him was wonderful.


That's my love letter to Disneyland chefs. :)
 
Thanks for resurrecting this thread. I had one of the pumpkin muffins last weeks (at Whitewater Snacks -- it was dinner) and my daughters ate much of it away from me. I will have to make them this weekend. I have a great apple-cinnamon-streusel muffin recipe but not one for pumpkin. I love fall food!

wow molly then you would really love the muffin recipe that I have because the only sugar used is the sugar already in the cake mix....and believe me they are suweeeeeeeeeeeeeeeeeeeeet....


ok ladies and gents who asked ....here is the recipe:

Iced 'n Spiced Pumpkin puddin' cupcakes

For Cupcakes
2 cups moist-style spice cake mix (about 1/2 of an 18.25-ounce box)
1 cup canned pure pumpkin
1/3 cup fat-free liquid egg substitute
1/8 teaspoon salt


For Frosting
1/2 cup plus 1 tablespoon cool whip free, thawed
2 tablespoons Splenda No calorie Sweetener
2 tablespoons fat-free cream cheese, room temperature
1 tablespoon canned pure pumpkin
1 teaspoon sugar free fat-free vanilla instant pudding mix
1/8 teaspoon cinnamon


Directions


Preheat oven to 350º

In a medium mixing bowl, combine all of the frosting ingredients, stirring until well mixed. Refrigerate until cupcakes are ready to be frosted.

In a large mixing bowl, combine all of the cupcake ingredients with 1/2 cup water... Mix until blended.

Line a 12-cup muffin pan with baking cups and/or nonstick spray. Evenly distribute cake mixture among the cups.

Bake in the oven for about 15-17 minutes, until a toothpick inserted into the center of a cupcake comes out clean.

Cool cupcakes completely, and evenly distribute frosting among the tops...


PER SERVING: 1 frosted cupcake calories: 112
Fat: 1.75 g
Sodium: 200 mg
Carbs: 22 g
Fiber: 0.5 g
Sugars: 12 g
Protein: 2 g

Bought in park, these are literally the best muffins anywhere. We go to DL during this time of year just to pick up a few muffins and go home. Truly. We have picked up pumpkin muffins 3x so far this year. SOOOO good. If this recipe works for me (not the best baker, but I can do simple stuff), I will be ecstatic. Thanks for bumping this thread.

Well here's a pic of an actual muffin from Disneyland, and the next pic is the ones I made last night.... the best ever muffins ever!!! lol... to the recipe I added 1/4 cup of sour cream and 1/4 of flour. the sour cream helps them rise a bit more (reacts with baking soda) and the flour compensates for extra liquid. also for the icing I used 1/2 cup good quality margarine, 1/2 cup cream cheese, 1 teaspoon vanilla 1/2 teaspoon cinnamon, and about 4 cups of icing sugar. It still made a bit too much but I put the rest away for another batch next week. Oh, I also added 1/2 teaspoon of ground ginger to the muffins...seriously they tasted exactly like the ones in DL! I have a tip for my pastry bag that is for filling jelly doughnuts like a giant syringe that I used to squeeze icing into the middle of the muffin, then switched to the star for the top. Oh and this is the original recipe not the low calorie one! Also fill the muffin cups nearly to the top, and it made 18 muffins for me.

Since they are so moist, I think I'll try making them next time with whole wheat pastry flour. I suspect they would still hold up well, just become a little more dense. They are also a little on the sweet side, so I may try cutting the sugar in half and see what happens.

I would try cutting the sugar by 1/3 first cause the texture may be off if you do more.... also maybe use half brown sugar, to me brown sugar tastes less sweet. I ate 2 for desert last night...I'm keeping them in the fridge so they are cold and they are keeping perfectly...it's hard to find recipes that stay good for 3 days!

:) now this might be tinkering with the original recipe too much but... you can substitute half the amount of oil, with applesauce in most muffins. Some people do all, but then they are much dryer and do not keep well for very long.
 
I have made these a couple of times and each time they are better. I put in chocolate chips instead of raisins, though. What pumpkin recipie doesn't benefit from a little chocolate added? :thumbsup2

I'm hosting a "Disney" Bunko and serving the Loaded Potatoe soup and the muffins for desert. After all the table snacks my group never eats a large desert so I thought I might try doing mini muffins...would that work? Anyone try the mini size?

Is the chocolate really that good compared to the raisins?
Any help would be appreciated!!

I haven't tried making them into mini muffins but imo, YES, the chocolate is so much better than raisins! But of course, i am really not a fan of raisins. The chocolate is really very good with the pumpkin even if it doesn't sound like it would be.
