How was your Easter?

We had bought tickets for one of Wagner's Ring cycle operas months ago, not realizing it was Easter Sunday. It was over 4 hours long but amazing. So we had brunch out beforehand.

How's everyone today?
 
I am not a recipe user... I tend to know the basics and improvise, so here is an approximation of how to make this yummy casserole.

Spinach Crunch

1 bag or 2 bricks of frozen chopped spinach
1 clove grated garlic and/or garlic salt to taste
1 brick cream cheese
1 can evaporated milk
1 egg
1 tsp. lemon juice
dash of onion salt
1-2 cups crushed corn or rice chex OR crispix
1-2 tbsp. melted butter


Cook spinach on stovetop and drain well. Add a little grated garlic and/or garlic salt. Transfer to an 8X11 baking pan.

Use the same pot that you cooked the spinach in to make a cream sauce using the cream cheese, egg and approximately 1/2 of the evaporated milk. Whisk constantly to incorporate the cream cheese and egg into the milk. Once it is a nice thick creamy consistency add a little onion salt and the lemon juice.

Pour the sauce over the spinach and use a spatula to mix thoroughly and spread evenly in the baking dish. Cover with crushed cereal to make a nice topping. Drizzle with melted butter. Bake at 350-375 for 25-30 minutes.


My mom has been making it for every holiday--Thanksgiving, Christmas, Easter and all 6 family members' birthdays for as long as I can remember after she found the recipe in a PTA cookbook when I was little. Since then every member of my immediate family has learned how to make it and we have taught our husbands and wives to make it too, yet the cookbook it came from is long gone and as far as I know we have no written recipe, we all just know how to do it. If you try it, let me know what you think!

So get this..my kids never ask for an egg hunt. Well yesterday after dinner Kaeleb is like, "Mom, when are we going to hunt for eggs?"
Ok so they are usually with their dad on Easter, or we go to church and then they go to their cousins house with their grandparents in Tricities. So I haven't had to do and egg hunt in years. Well last year we had one at my friend Ambers house before the BBQ. Anywho I felt so bad. I didn't even think of an egg hunt.
1. Because Jordan is way too COOL :cool2: to hunt for eggs.
2. I don't have any plastic eggs.
3. I already used most of the other eggs for deviled eggs & egg salad
4. They never ask for this....

So next year, I guess they will hunt for eggs, even Mr.I am too cool for anything....

Oh yeah, it's a dry heat, just like here in Phoenix. Anything over 100 doesn't matter, it's still hotter than h-e-double toothpicks!!

Kids are funny! Just when you think you have them figured out - BAM, they change again :upsidedow Jesse was just fine with no egg hunt. As long as he gets his chocolate and an XBox game, it's all good!

Yes. Thank goodness, otherwise I couldn't tolerate it. I don't know how people live in places that are humid. We went to Florida one year in May and the heat and humidity were so bad, I was miserable. You just drip sweat even in the shade. It's icky! :scared:



Heck, I don't even have to wait till June for that. I had to hurry into Target today, and get out before I saw any deals. So I was sweating a bit. Not good.
What?? You didn't stop to check out the after Easter deals?? :eek:

Does anyone know what a "realistic budget" for June is? Taking into account the shows, meals, etc. - what is a good amount to shoot for???? I have no idea and would like to start getting prepared :woohoo:

I'd like to know also. I'm looking at flights to Las Vegas right now and hoping that some DING! fares come up next month for flights to Vegas in June.

Hopefully after Stripper 101, we wont need to pay for much. :rolleyes1 ;)

In the meantime, I'll see about making up a mock price list of things so everyone can get an idea of what it will run them. Keep a chair or soft pillow handy for when you faint. :rolleyes1 :rotfl:

The only issue I would have with that is that if people confirm they are going and then do not show up, the person who reserved gets charged $20 per person (Fri-Sat) who does not show up plus $15 food costs per person who does not show up, so it would be great if everyone can be sure, sure they are going!!!!

Theresa: don't count me in the reserved count. Chances are that I'll be leaving earlier in the week (I'm planning on at least Sun.-Wed for now, and if I can stay later and add on to activities great--if not--more gambling time!)
