If we're staying offsite and have a rental car, can we park at one of the parks and then use the Disney transportation between parks? Is there such a thing?

Sure. The only thing though is that you would have to get back to the park where you parked your car, so I'm not sure I see an advantage to using Disney transportation to park hop rather than your car.

The older kids (adults) that are with us were asking, they want to split off an go their own ways.

If I park at say, MK, is that parking pass valid for HS, Epcot etc. or do I have to keep paying at each park?

Parking is good for the whole day. You can move between parks for for no additional payment that day.

If you park at the transportation center, one monorail goes to MK and the other goes to Epcot. Epcot also has it's own stand alone parking, as do DHS and AK.

If you're doing Chef Mickey at Contemporary, you can pay same price to valet park there. Eat, ride monorail to MK, return and hand the attendant a few bucks. You need to have an ADR confirmation number, or at least you're supposed to - guard shack attendant just glanced at my computer printout.
