He. My family loves diced up potatoes fried. I usually cut them up, throw them in the microwave then throw them in a frying pan or oven with a little oil. But what ever I do, they ALWAYs seem to stick. I add more oil which I hate doing but nothing helps, sometimes they end up looking like mush.
 
After you microwave them toss them in a bit of oil and some seasoning (if you want), then cook them in a pan that has been sprayed with cooking spray. Also use a medium high heat, not a high heat. Don't move them around too much (that will break them), try shaking the pan to move them around after a few minutes. The less you touch them the less they will break.
 
After you've tossed them in a bit of oil and some seasoning, you might spread them out on a large cookie sheet and roast them in the oven.

You might also be microwaving them too long. Remember, they will continue to cook inside as they are browning. If you are pan-frying, let them sizzle a while before turning, so that side can really brown. Once that side is crispy, then turn.

Third, it could be the pan you are using. A non-stick pan just doesn't get as hot & brown as well as a stainless steel pan.
