Non park day - what do you do?

Well if you are going to do Mickey's BBQ, I suggest exploring the campgrounds. They have a lot to do there including fishing, bike riding, horseback riding, hiking, etc. We really enjoy when we have stayed at the campgrounds and had an off day to explore all the things it has to offer. We also like to do some DTD time and maybe pool time (but we usually go in Dec/Jan, so we don't do pools then.)

We stay at Fort Wilderness so when we have a down day we just hang out at the campground, go swimming, go walking around or ride our bikes, sit on the beach, go to the campfire, basically just hang out.

Laundry, mini-golf, resort hopping, offsite attractions if you have a car (Space Center, real beach, airboat ride, etc.)

Our last trip our little one was 5. She loved the down days as she was tired from our park days. Her favorite things were Mini Golf (Winter Summerland is great for little ones), swimming and the play ground. It was a much more "normal" day for her which helped her relax and be less cranky when we returned to the park.

Also, the activities for kids at the resorts can be lots of fun. When DD was real little (18 months) she spent a good hour popping bubbles that the CM was blowing for the kids,

On our last two trips, we spent a day at Kennedy Space Center and also saw a Tigers spring training game. If you are baseball fans and visiting during spring training, I highly recommend trying to squeeze in a game! We are planning our trip for next year and will go see a spring training game again, then head over to Chef Mickey's for dinner.

My SIL spends about 4 days each year in a cabin at Fort Wilderness with my niece and nephew and her mom, and they don't even go to the parks! There is SO much to do around the World, especially at the campground!

Sleep in, late breakfast, shopping, dinner in DS or at a resort.

I like to go to Disney's Character Warehouse to get some inexpensive souvenirs

Have gone other places in the past like Cape Canaveral and Daytona racetrack. Next trip will visit Disney wildlife preserve run by the Nature Conservancy.

Sleep in, swim, relax by the pool, do a bike ride, go to DTD, maybe Hoop Dee Doo Revue.

We will be there for 11 days, we currently have 7 days of park tickets.

Arrival day- Arrive at Resort around 1:30. Pool, Send someone to grab groceries. Then an early evening at Disney Springs.
4 Rope drop Park days.
Rest day-DS's 23rd birthday. Pool, 4:00 Dinner at 'Ohana
Park-rope drop
Rest day- This will probably end up a waterpark day
2 Park Days
Departure day- No Park. Breakfast Boma, final pool time, Leave at 3:00

Any combination of pool, resort hopping, and Disney Springs. I'm enjoying DS less and less and would leave it out entirely except it's become a tradition now to go and let the kids shop for their souvenir towards the end of the trip. Also, Earl of Sandwich. Haha. I would love to do Mickey's Backyard BBQ on an off day!
