No Milk Menu

My good friend and her boyfriend are coming to dinner on Saturday night. She is allergic to all milk products.

I'm looking for some ideas for an appetizer and main course that won't contain milk, butter, etc.

I can make an apple pie for dessert. Otherwise, I don't know what to select for the rest of the menu.

Pasta with tomato sauce. If buying bottled, make sure there is no cheese added. There is one brand that does not have cheese, but right now I can't remember the brand.

salad with oil and vinegar.

Chicken breasts. Pound flat or slice thin. dredge through beaten egg and then crushed rice Krispies. Brown in olive oil on the stove and then finish in the oven.

Be careful serving beef. If she is truely allergic and not intolerant (epi pen allergic) she will also be allergic to the protiens in beef.

Home made chicken soup with or without rice.
 
Tortilla chips with fresh salsa for an appetizer.

Enchiladas stuffed with chicken and rice and covered in an red sauce. Serve with sides of refried beans and guacamole. Just skip the sprinkling of cheese that is often put on the beans. Add in a chicken taco with some lettuce, onion, and tomato if you want a larger entree.
 
Prego spaghetti sauce does not contain cheese. You may be able to find a number of butter products that don't contain milk- I was allergic to it as a child and country crock did not actually contain milk products (you want to see if whey/milk/or lactose is on the label for a full milk allegry).

A basic baked/grilled meat does not need butter- you can always use olive oil if needed instead. A basic vegtable can be cooked without butter or with a substitue. Make rice instead of potatoes as that does not have to use butter either.

A vegtable tray or fruit tray are good appetizers without milk products (again a dip may or may not contain milk but can be put out).

If you have something that you love you can also try using a milk substitute. I know that as a child Rich's(Riches?) had a non dairy creamer that I could have- mom would half it with water to use instead of milk in recipes.

It's funny, as soon as I started thinking of menus, my mind went to couquille st. jacques au gratin and lasagna.

Hmm, maybe I will do pasta with meatballs and sausage. I know that she can eat beef. She is only allergic to the milk. I was even thinking about doing a turkey dinner, but was worried about the potatoes.

I'm intimidated about doing Tex/Mex for this friend. She lived in CO for several years and everything that I've tasted that she's made in that style has been SO good. I don't think I could come close to her cooking ability with that menu. She can have us over and make that for us. ;)

So, let's talk appetizers. Any other suggestions to go with macaroni and meatballs?

Your apple pie is dairy free? My pies all have butter in the crust and often butter in the filling. Milk often lurks in places we forget about.
 
Sweedish Meatballs...made with soy milk rather than cow milk. My son was allergic to milk, so we would make sweedish meatballs and sub the soy in for regualr......It is actaully BETTER with the soy!!!

UMMM allergic to milk = allergic to beef? Thats a new one to me and my dd was epi-pen allergic to milk. Our allergic never said a word about avoiding beef.

Home made garlic bread (if i remember most store bought breads were dairy free), mix some milk free margarine ( we always used blue bonnet light) with some garlic and bake.

Salads are good, just check the dressing labels or use oil and vinegar.

Its easier now to know when something is milk free than what it was when Bradyn was milk free.

Dessert, how about some fruit topped with a non dairy containing whipped topping ( i know we were able to find some) or some Soy ice cream- tofutti and soy delious come to mind.

Yep, dairy free apple pie.

I'll use crisco in the pie crust instead of butter and I've never used butter in the pie filling. Just apples, lemon juice, cornstarch or flour, sugar, cinnamon and nutmeg.

I go back and forth with crisco and butter in crust. I know crisco crust is just as good and flakey as butter crust.

Be careful with the non-dairy creamer. Most of the ones I've looked at have a "milk derivative" which would not be safe for someone with a true allergy.

Look up vegan recipies. Those will be all dairy free. There is an awesome cookbook called "Vegan Cupcakes Take Over The World". It has awesome recipes for cupcakes, all dairy free.
 
Fleishmans unsalted butter is dairy free but only get this one kind as other Fleishmans are not.

Ds has a friend who has been eating at our house for 7 years and she is deathly allergic to dairy and is unable to eat beef because of the protiens. She has to be extremely careful about cross contamination as even the smallest hint of dairy can cause a reaction which would require her epi pen and a trip to the ER.
 
Here's a milk-free, super-easy, moist chocolate cake recipe.

Ingredients:
1 1/2 cups unbleached all-purpose flour
1 cup sugar
3 tablespoons unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon vinegar
5 tablespoons vegetable oil
1 cup luke-warm water

Preparation:
In a 8x8 cake pan, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the water over the mixture and stir until well mixed. Bake at 350°F. oven for 25 to 30 minutes, or until it springs back when touched lightly.

My mom loves this with berries on top, or I will make a milk free icing for it.

For icing, I use a couple tbsp shortening, then icing sugar and cocoa with a bit of hot water. I never meausure, just add some icing sugar until its hard to mix, then about a tbsp of hot water, then a couple tbsp of cocoa (done until it tastes good). Then just keep alternating hot water and icing sugar until I have enough.

I usually serve this one directly from the pan. If you want to take it out of the pan before icing, then its best to mix it in a bowl and line the pan with wax paper for easy removal.

Then I would think she allergic to both Milk and Beef. But being allergic to milk does not mean you are going to be allergic to beef.

Can a cow's milk protein allergic child eat beef?

Parents often wonder whether their child can eat beef, since milk and beef both come from cows. But recent studies have shown that children with cow's milk protein allergy only rarely have problems eating beef or veal. Therefore, most milk allergic children can eat beef without any problem.

I would think if the friend didnt mention that they also couldnt eat beef she would be safe to serve it.

not sure how you are going to make pie crust without milk/butter?
 
My friend emailed me this morning. Not only is she allergic to milk, she is also having problems right now with beef and tomatoes. This is based on a problem she had with an antibiotic over the summer, not with her original allergy.

She also let me know that her BF has severe nut allergies.

Right now, I'm thinking chicken cordon bleu as a main course but with her chicken cooked separately, without cheese. My DS doesn't like cheese, so that's how I usually cook his. I'm used to baking two separate styles of this dish.

I'll have to read everything before I cook it to make sure that nothing has come in contact with nuts. I'll have to ask her what the bird's food will do to the air and his allergies. I may have to keep Igor in another spot in the house for the night. Bloo's should be ok since he only eats parakeet seed. Igor is a big fan of nuts.

I routinely make apple pies with Pillsbury pie crust and use the recipe right on the box. My dd is allergic to milk and she loves this treat!!!!
