It is a tradition to freeze the top tier of your wedding cake and then take it out of the freezer, thaw it and eat it on your first anniversary.
It usually does not come out well on that anniversary because it gets freezer burn or is not wrapped properly so takes on some of the flavor of other items in the freezer.
Apparently some of our peeps had alcohol or styrofoam cakes!

We were very fortunate our cake was wrapped really well (I didn't wrap it, my husband's grandmother...one of the most wonderful woman ever....took care of that for us) and out cake was absolutely delicious on our anniversary. I don't know anyone else who ever said that about their cake. I have no idea how the tradition started.
