From what I remember the people who have had issues just had to inform the phone rep card A was bought for $25 at
Walmart on 1/1/25 and card b was bought from CVS on 3/1/25 for $50. They never had to discuss that A transferred to B on 4/1/25 or that you bought a Mickey bar on 4/4/25 with card B.
It sounds like you are very organized.
Does your spreadsheet include the giftcard and pin/ean? Does the spreadsheet also include the transaction information for when you bought the cards?
If that is the case I think you should be fine to discard the cards that you have transferred money from and its associated records from the folder.
