Nephews (9 and 11) first trip to WDW

My brother and his family are joining us in Orlando at Christmas (Dec 24 until 1/3) for the boys' first trip to WDW. Steve and Allison live in Orange County, CA and are DL experts, as are the boys. We will be staying off-site in a villa. I've been given the task of travel agent and I'm finding this almost too awesome a responsibility. For my family it's not a problem--we have AP's and visit way too often. Ticket media is still in question--it may be 7 day park hoppers over a 10 day stay or the 30 day world passes from Paramount for my brother's family. I know I will plan some resort and park meals--will try for Cindy's, dinner at 'Ohana, perhaps Whispering Canyon. I also will try for an Illuminations cruise as a special treat. I want to do the Candlelight Processional (for me) and waver between the most expensive tier in LeCellier and the Garden Grill as another character event. We won't plan on touring as a group (10 people is just too much), but I feel like DH and I need to spend some time showing them the best of each park.

Suggestions please!
 
You are planning a trip during the busiest time of the year. It's a lot of pressure trying to plan for another family, too.

What a wonderful Christmas you all are going to have!!! I think they will LOVE the other 3 parks and doing the things that they don't have at DL!!! My kids are 12, 10, 8, and 5. We are an animal loving family and all LOVE AK! Two of my kids consider EPCOT their favorite!! I would keep fancy meals to a minimum with the kids, but mine have seen the candlelight processional and really enjoyed it!!! Have a great trip... Lacee
 
The Christmas crush is one of my concerns. Allison only reluctantly agreed to the trip--she hates crowds. Thanks for the comments so far--I am trying to focus on meals at resorts that are kid friendly. Maybe Steve's family doesn't need to do the Candlelight Processional--that's just a special part of Christmas at WDW for me.
