Au Gratin Potatoes
from Cinderellas Royal Table breakfast in the Magic Kingdom!
Serves 6.
1/4 tsp. garlic salt
1/4 tsp. white pepper
1/2 tsp. salt (optional)
3 cups milk
1 cup shredded mild cheddar cheese
4 cups diced and cooked potatoes
1/2 cup flour
1/2 cup fresh and cooked bacon bits
1/2 cup diced onions
1/4 cup melted butter
Preheat oven to 350 degrees F. Dice and cook the potatoes. Dice onions. Gather remaining ingredients. Melt butter. Add onion and saute. Add bacon and cook for 2 minutes. Add flour and stir to make a paste. Cook for 5 minutes.
Add 3 cups milk. Stir until lumps are gone. Cook mixture 10 minutes and continue stirring. Add potatoes, cheese and seasonings. Mix until cheese is melted.
Bake at 350 for 10 minutes.
I don't have mashed potatoes specifically from 1900 Park Fare, but have these - maybe they're close:
CHEF MICKEY'S MASHED POTATOES
2 1/2 lbs. peeled potatoes
8 oz. butter (2 sticks)
2 C. hot milk
4 oz. (1/4 C.) grated parmesan cheese
3 oz. scallions chopped
1 tablespoon salt
1 tablespoon pepper
Peel the potatoes and cut into chunks and boil about 15 minutes until tender. Mash, using a potato masher or a heavy fork. Put back in the pot with the butter, cheese, scallions and milk. Blend well, adding salt and pepper to taste. (Do not use a food processor for this recipe.)
When we were there, the French Toast did not have apples on it. This is the recipe as we had it at Cinderella's:
Cinderella's Cheese French Toast
from Cinderella's Royal Table, Magic Kingdom
3 each eggs
2 cups milk
1 tablespoon vanilla extract
3 tablespoons baking powder
6 tablespoons sugar
2 cups all-purpose flour
1 quart frying oil
6 each cheese Danish, cut into quarters
Mix eggs, milk and vanilla together and set aside. Sift baking powder, sugar and flour together and add to egg mixture. Allow to stand for 10 minutes.
Bring Shortening to 375°. Dip cheese Danish in egg batter and place dipped bread in fryer until golden brown on one side and turn over to brown the other side. Roll in cinnamon/sugar and serve.
